- Cart noodles are Hong Kong’s ultimate fast food. When you order, you shout your choice of noodles, pick some toppings, and get a bowl of noodles sent right to your table in less than a minute.
They were once ubiquitous in Hong Kong in the 1960s and ’70s, when you could find noodle vendors on almost every street corner. Nowadays, you won’t find cart noodles on the street anymore, but there are still stores continuing the tradition. We went to a Michelin-recommended cart noodle shop to see how they’re made.

Fun fact: the street vendors were on a cart because if the polices came they can push them away into the street alley and nearby warehouses fast. Sometimes accident happen when a cart hit a kid and caused serious burn (sometimes boiling broth, sometimes frying oil). We all learn to stay away when the whole street full of pushing carts are running, stay the heck away for your own safety. You can still eat your food and when you are done just leave the bowl on the street nearby. They will come and pick them up after the polices are gone. Hepatitis is the main reason the government want them gone.

You need to have a lot of money in your retirement. HK is an expensive place. The space is also limited which make it a very cramped and small place to live. But as long as you have a lot of money with you, you should be good.

This is like a Chinese "subway". Pick your bread (noodles) and your fillings (toppings). We should be doing this in America!

Simon Li No, not like hot pot. All toppings are already cooked. You choose noodle, and topping and then they briefly heat the noodle in hot water, add soup and the toppings you choose. My favorite was a complete noodle, that means every topping, not from this shop so it’s about 12 kind. Makes me drool just thinking about it, but no more for me cause I immigrated to US.

Hong Kong was a British colony for a long time so it makes sense historically speaking
i mean, they got chinese names ofc, but when they're on a show/interview, it's easier to introduce themselves with their english name
