    2 questions on your kitchen equipment-
    1- what brand of stainless pan did you cook the risotto in?

      1. Its from Le “Creuset” it’s a bit pricey, but it will last a lifetime
      2. It’s from “KanaLifestyle”. I have the cooking racks and the stainless pans for the breading station from them

    I will sometimes even just use left over rice…add whatever ingredients you want. As you said the key is cooling rack.

    First of all arancini are form Catania, while arancine are from Palermo. Little variations but locally is a mandatory war. Second bravo to you that are using one of the most precious rice from Italy, from the northern regions, Piemonte, Lobardia, where the rice is grown
