In this video I show you my step-by-step process for smoking pork ribs:
1. Start with half of a stack of briquettes
2. After briquettes are fully heated fill your slow and sears on either side of the webber kettle
3. Put your can of water next to the briquettes and add your favorite wood chunks
4. Bring temp of grill up to 250-300 degrees (note- it is ok if the temp is anywhere between 200 and 375, just keep in mind the hotter the grill the less time you want to leave the ribs on. Make sure the smoke is rolling good before putting on the ribs)
5. Take ribs out of package and put on the rub
6. Put the ribs on the rack and insert your thermometer probes. The internal temp of ribs needs to be between 150 and 200 before you wrap them in tin foil.
7. When the ribs reach 150-200 or have been on for 1-1.5 hrs (whichever comes first) wrap your ribs tightly in tin foil, reinsert the temp probe and put back on grill or in oven at 275 degrees. Let ribs cook until internal temp reaches 185-210, then keep the ribs at that temp for 45 min
8. Mix up 50% bbq sauce and 50% brown sugar (pick whatever bbq sauce you like)
9. Unwrap ribs, place on tin foil covered cookie sheet, and brush the bbq/brown sugar sauce on the top of them.
10. Caramelize the ribs on the grill for 10min @350
ENJOY!!!
The dry rub recipe I use:
1/8 cup paprika
2 Tbsp Packed Dark Brown Sugar
2 Tbsp Kosher salt
1 Tbsp Dark Chili Powder
1 Tbsp Cumin
1/2 Tbsp dried oregano
1/2 Tbsp Granulated sugar
1/2 Tbsp Ground black pepper
