During my stay in Japan one of the most (probably is the most) delicious bowl of ramen i’ve had is in a chain iekei ramen restaurant called Musashiya. Their 旨辛 (spicy) bowl of ramen is HEAVENLY. Hot, thick, super delicious soup, chewy noodles, tasty chashu and perfectly cooked eggs with refreshing horenzou. The soup is SO GOOD, i always get rice (it’s free!) on the side with a sprinkle of sesame seed and eat it with the broth after the noodles are gone. It’s the best part of the experience. Oh my god. I always go there after a long day of work, whenever i don’t know what to eat or when i got hungry at 1 am. It’s so good and comforting that for me to date if i think of home, i think of that steaming bowl of ramen in my neighborhood area. I always customized the noodles to be softer (やわらか), the soup to be stronger (こいめ), and the oil is regular (普通). I went there so much, the staffs know my order by heart. You’re right, it’s so underrated. This is my first time seeing an iekei-style ramen on a youtube content and i’m so happy to see it❤ thank you for your service!

Idk what Japan does to its eggs when it comes to ramen, but its nothing short of divine. The eggs are cooked to the perfect point, and the broth always elevates it even higher. I hate being sick, i want a ramen bowl now but ik i wont be able to taste it
I'd go for food ramen just right. Thick, thin, in the middle to name a few. If I can take my ramen, I'd take mine regular. With the soft boiled egg, Tashu, broth with some seaweed. Even though I never been to Japan, I would love to go there someday. Good culture, neat and tidy, and the child obesity rate is low. Which is good.
When I moved to japan, I thought I didn’t like ramen, then the journey begun… -hakata tonkotsu: ichiran, loved it -yuzu shouyu and shio: afuri, was better -a bunch of local tonkotsu places, started thinking ichiran was meh -tantanmen: usagi, it was amazing -mizo ramen: ningen banzai and last boss, was incredible -yokohama iekei: baku…, no words, by then I hated ichiran 😂
Have you also had the tantanmen because of Japan Eats? It was delicious but I almost didn't made it, never had so much pepper sauce in a single sitting 😂🎉 (my girlfriend had the special one and she thought she was eating bunny meat, the chicken indeed seemed a bit diff lol)

Fun fact: the idea of eating rice with noodles is not only in Japan, but also in Indonesia but it's usually the stir-fried ones than the soup ones. Noodles are usually found in nasi kuning and uduk (nasi means rice) as a lauk (no equivalent in English, this means something eaten together with rice or any carbo foods)

One correction, Iekei does not translate to homestyle. The 家 in the name refers to Yoshimuraya, which is said to have invented this style.

My absolute favorite Yokohama Iekei ramen is at ラーメン大将 in Mutsuura. It’s very simple, but a classic Yokohama style tonkotsu ramen 🙌

Tho, I’m Mexican, and we really like spicy but flavorful food, so spicy levels were just fine for me
