This salad will keep your GUT healthy everyday!

  • Salads are wonderful way (similarly to soups ) for providing our body with a spectrum of nutrients necessary to obtain and maintain a good health. This recipe is full of superfoods that will help to keep your digestive system healthy. Probiotics and prebiotics as well as plenty of vitamins and minerals all combine in one bowl of goodness and wonderful flavours.
    What You Will Need:
    6 medium boiled and peeled potatoes ( I used Russet )
    1/2 large leek
    1 cup frozen peas
    1 cup cooked buckwheat
    4 hard boiled eggs from happy hens :)
    1 large sour pickle ( fermented )
    fresh parsley and dill, large handful of each
    salt and pepper to taste
    For homemade mayonnaise:
    1 fresh egg ( washed well )
    1-2 tsp apple cider vinegar
    1/2 tsp sea salt
    1/2 tsp cane sugar
    2 tsp mustard of your choice
    200 - 300 ml mild flavoured oil ( I used avocado oil )
    touch of ground black pepper

    Fantastic salad, thank you, delicious nutritious and very much reminds me of Polish potato salad Babcia used to cut for me, dziekuje I pozdrawiam
