    What's new with you? Are you ready for June? I am so excited that my kitchen is getting closer and closer to getting done each week. It's crazy to think that I thought it would be done in three weeks and it's been almost three months since this all started. I have definitely had to learn to manage my expectations when it comes to timing but it will all be worth it in the end!
    I was in Austin, Texas for a few days for Nekohama to recipe test some savory matcha recipes with chef Daniel at The Well and wow do we have a special dish for their dinner menu coming soon! Are there any recipes you really love that have some unique flavor combinations? Anyway, I hope you enjoy this what I eat in a day video from last weekend. I don’t know if you watched my Korean pancake video from earlier in the week but I did my own version of that recipe that is a little less spicy for dinner! Let me know if you make it at home too. I always love to see pictures and hear feedback. Also, please comment below and share any new recipes you think I should know about

    Breakfast Tropical Smoothie
    -1 cup frozen spinach
    -½ cup frozen mango
    -½ cup frozen pineapple
    -½ banana
    -1 inch fresh ginger
    -Almond milk
    -1 tbsp almond butter
    -1 scoop Unflavored Bulletproof collagen protein powder :amzn.to/3z64cUA

    Dinner Vegetable Pancake
    -1 red bell pepper
    -2 cups mushrooms
    -1 leek
    -6 green onions
    -Small yellow onion
    -1 zucchini
    -2 tbsp Korean Spicy paste ( or chili powder)
    -Salt & pepper
    -1 cup gf all purpose flour
    -2 eggs ( optional)
    -½ cup water
    Cut all the veggies in thin slices. Mix all the ingredients together, make sure the dough is liquid-y. Add olive oil or vegetable oil to a pan on high heat and cook each side for a couple of minutes until golden brown. (during flipping the pancake it can fall apart but just press it back together with a spatula or spoon)

    Actually I have a korean friend, whose father is a chef and every time he makes korean pancakes for me, the dough before cooking is more like thick soup. That is the key to make it nice round shape. I don't know the details but I found I really love both of styles! I had the pancakes that you told us earlier for lunch!!

      Ahh thank you so much for this tip!!! i realized after I made this and google it that its better to make the dough separate and then trow it over the veggies!

    As a Korean, I like to mix flour and water first to make watery paste first before adding all other ingredients! It makes it easier to put everything together

    Whenever I make a veggie pancake I usually use a grater and shred my veggies to make them nice and thin, it makes for a really nice consistency!!

      Eating healthy foods, specially plants, helps our organs remove toxins. Some foods are very rich in antioxidants, therefore they help fight toxins (such as oxidants). High-fiber foods and drinks also help clean the intestines and "detoxify" (aka remove toxic/polluting material). Finally, a diet abundant in healthy foods helps maintain proper organ function, which in turn helps them remove toxins. I agree the term is often used incorrectly and irresponsibly, but we should also recognize the importance of foods which help our body remove toxins.

      @Gatag At i mean it has no nutritional value because the point is to help remove the waste from other foods and clean out your digestive system, not provide nutritional value.
      (in grosser words it makes you poop which is necessary for a healthy body and just life)

    The Korean pancake looks great! I would cut the vegetables a bit more, especially the red bell peppers. If you want to make the pancake crispier, you can make the Korean pancake or Buchimgae into a donut shape (middle would be empty) so it’s crispier on the inside. 🤍 There are a variety of ways to make the Korean pancake. It can just be the scallions and onions too.

    Love the pancake idea for eating more veges. I feel if you made the batter with the flour eggs & water and whisked it smooth then added the veges to it, it would turn out rounder and might not break while flipping in the pan.

    Highly recommend shredded zucchini in the buchimgae👌🏼 and we don't cook them with the lid on, bc we want them crispy and golden on the outside! Love from Seoul💕

    My mother in law got her kitchen done a little over a year ago and it took way longer than they said it would. Same happened with my aunt/uncle. Do they just lie about how long it will take? I feel like that’s so common haha

    Just wanted to comment that it's so good that you added ginger to your smoothie. People don't know that eating/drinking cold, raw and frozen things does a number on your digestive system. Adding warming spices like ginger helps to add warmth to cold ingredients and helps digestion.

    if we haven’t eaten sugar for month will the body will react different if we ate sugar for 5 day straight? Any ideas could you share and how can we help with guilty pleasure

      ofcourse.... u can quit white sugars, but replace it wit either honey, brown sugar or maple syrup.... we ol knw very well dat our brain do need glucose for functioning. if u directly quit sugar for a long duration no doubt u will loose weight, fats frm belly area but ur blood sugar level will collapse. and ur brain won't function properly

    I make my matcha latte directly in the milkfoamer from Nespresso. Is that bad? I just put in de oat milk and matcha, that's it.

      Its not "bad" but its not ideal. The bamboo whisk actually mixes the powder better into the water and it becomes more smooth and frothy. If you don't have a whisk the frother will work.
