    If you peal the rhubarb it wril be more soft.
    In Denmark we love this type and love to top it writh sour cream or ice-cream or wipcream. 😀

    My grandma had a rhubarb patch (five plants in all I think) and they yielded a ton of rhubarb every summer. My grandma always made a ton of strawberry-rhubarb jam to can and made a strawberry-rhubarb pie for every event. It is absolutely my favorite. I really wanted to make one this year in her memory but I haven't been able to find any rhubarb at the farmer's market.
    Thank you for making this pie and reminding me of all the wonderful memories I have of helping her can in the summer.

    I grew up on Rhubarb pies and cobblers. I am fond of the strawberry rhubarb pie but I love the rhubarb by it’s self best. My Grandparents had a huge patch on their farm and we had pies, breads, jams and spreads made out of it. I live in a big city now and miss all the goodness of those farm veggies and fruits. Rhubarb is not as common in the grocery as it used to be. I will say, your made me salivate! It was a piece of baking art!

    Rhubarb is one of those plants, that doesn't bother her enough respect. My mom used to can her rhubarb, and make pies and jams out of it. Watching things like this, makes me miss her even more. Thank you, Emmy.

      Two sticks of butter weighs 226g for sure. According to the USDA National Nutrient Database, 1 cup of sliced strawberries is 166g, and 1 cup of diced rhubarb is 122g . Now, whether these amounts are even close to what Emmy had for the filling is another story, especially since she cut the rhubarb into smaller pieces than (what seems to be) standard.

      I know its been a year but I would like to add my measurements, incase someone is still looking for it: I used 250 gr of rhubarb and 500 gr of strawberries! Roughly.. Actually i had 200/550 but as long as its the same weight in total I think you will be OK.

    Wiggling, pounding the counter, eye rolls, deep breaths, talking with one’s mouth full...all add up to I MUST MAKE THIS PIE! Yuuuuum! I also love strawberry/rhubarb pie but have never made one. I’ve made lots of homemade pie crusts but never this one. Hubby and I are in for a treat!!! Thanks so much for sharing this. I love your tart pan idea and now here’s my helpful hint: I use foil around the edge of the crust as well but I put it on during the first part of baking then remove it towards the end rather than the other way around. Either way, it works :). Thanks again!

    Strawberry-rhubarb has been my absolute favorite pie since 1969, when I had it at Mrs. Mary Money's in Fulton, MO. When served warm, in a deep dish with a bit of heavy cream drizzled over it ... absolute heaven!

    I love strawberry rhubarb pie. Its something different than the standard "American apple pie " The first time I made it my mom was unsure about it but she came around once the smell of yummy warm pie filled the house. Definitely worth a try.

    I love playing with pie crust. I use herringbone or do cut outs on regular top crusts (leaves, pumpkins, apples, etc.) and sprinkle demerarra, turbinado, maple, citrus, etc. for that wonderful extra crunch texture. People always love my apple pie and can't figure out the difference. Most times it's just sugar sprinkled on top. Occasionally I'll use maple sugar in it. Same with pecan pies! 😁

    My grandmother made strawberry rhubarb pie all the time for me. I loved it. I don’t remember her recipe but maybe I’ll try this one. And I think you need more rhubarb plants so it will grow better and it takes a few years to establish itself. :)

    You can assemble the lattice on the counter. that way you can throw it on immediately after you dump your filling into the bottom crust. Less chance of soggy bottom that way

    I would have loved to see the bottom, the bit I saw looked lovely and golden! How did the crust manage to be crunchy with no blind baking and all that juicy fruit? True alchemy from our amazing Em….thankyou

    Hi Emmy! I am a Filipina but living in the US. I watched your videos a lot. I love the video about Sea Grapes/popping bubbles seaweed. We have a lot of that in the Philippines. I miss eating them. My mouth was watering while watching you eating.:D By the way, I just started my RUclips channel (Good Bites) because I also love to cook and you have inspired me:)

    Awesome job on the pie, Emmy. And for trying the herringbone lattice pie crust for the first time, you did great and it looked amazing. Rhubarb pie isn't one that I normally reach for, but with strawberries, I'd probably give it a try. Now, I want pie!! ❤️🌹

    How funny... I was randomly watching your other video where you mention about how your favorite pie is strawberry rhubarb and how we’re missing out if we haven’t tried it...and you literally upload this HAHA love it!! Definitely going to test out this recipe.
    Ps that recipe book is so cute!! My mom and grandma have passed me down many recipe books from even older generations in our family and it’s really so special To have handwritten items from my ancestors. I always tell my friends, I know we’re young, but please think about doing things such as this... writing down recipes or memories or ideas... it will be so fun to pass those down to your children and beyond

    Hey Emmy I was on RUclips today and stumbled on Turkish food recipes' video on Jam made from roses. It looks really good and it was very interesting, could you maybe make a video on this recipe? It'd be nice to see how you'd find this Jam's taste since you're very honest on the tastes and describe them really well. Every country has it's own unique cuisine and what someone might find tasty and normal, someone else might find bitter and unusual. I love Mexican candy and the spicey ones but there's some people that find the spice clashes with the sweetness. Idk I'm rambling lol thanks 😘

    Oh god it looks so gorgeous I can barely control myself from not licking the sceeen. I have the same recipe for pie crust, but I usually fill it with apple slices, sugar and cinnamon, since where I live is no good climate for rhubarb. I'd love to taste rhubarb one day. Love u emmy.
