    Bharwa Baigan Masala Sabji
    Serves 7 People
    Cooking Time: 40 mins
    Ingredients
    1/2 Kg Small Brinjal
    4 medium sized Tomato
    3 Small Onions
    1/4 Cup dry Grounded Peanut
    2 Tbsp Coriander Powder
    1 Tsps Kashmiri Red Chilli powder
    1/2 Tsp Turmeric Powder
    1 Tbsp Fennel seeds Powder
    1/4 cup Gramflour -Besan
    1 Tsp Salt
    1 Tsp Sugar
    Handful of fresh Coriander leaves
    2 Tbsp Oil
    Fill all the Brinjal as explained
    3 Tbsp Mustard Oil
    1 Tsp Cumin seeds
    1 Tsp Crushed Mota Garam Masala
    1 Tsp Chopped Garlic
    1 Tsp Ginger-garlic paste
    Pinch of Salt
    2 green chilli finely Chopped
    2 Cup water
    1 big spoon Fresh Malai- cream
    Handful of fresh Coriander leaves
    PROCEDURE
    - [ ] Take 6-7 small sized brinjals , wash them throughly and wipe off the excess water.
    - [ ] Make two slits as shown in video and ensure no Germs are inside
    - [ ] Take 3 medium sized onions, chopped them finely
    - [ ] Take 4 medium sized tomatoes, chopped them finely as well
    - [ ] Take 1/4 cup roasted peanut and ground it to a powder
    - [ ] Take 1/4 cup roasted gram flour , 1 tbsp chili powder, 1 tbsp coriander powder, 1/2 tsp turmeric powder, 1 tbsp fennel powder ,1 tbsp aamchur (dried mango) powder ,1/2 tbsp salt, 1 tsp sugar, 1 tbsp lemon juice. Mix them well.
    - [ ] Keep a portion of this stuffing paste aside for later use in the gravy.
    - [ ] Take this and stuff the brinjal tight and well
    - [ ] Fry all the stuffed brinjals for 5-6 mins uniformly, don’t over fry
    - [ ] Now, lets prepare the gravy.
    - [ ] Take 4 tbsp mustard oil on pan and heat it.
    - [ ] When heated enough, toss1 tbsp Cumin , 4 chopped green chili
    - [ ] Toss chopped onions and tomato respectively.
    - [ ] Add the remaining portion of the stuffing paste to form a thick gravy, cook well for 2 mins
    - [ ] Add hot water to form the gravy consistency according to your taste.
    - [ ] Toss in the fried brinjals into the gravy and cook for 5 mins in low medium heat.
    - [ ] Turn off the heat and add fresh unsweetened cream ( though it’s entirely optional)
    - [ ] Add handful of fresh coriander leaves
    - [ ] Serve hot with Rotis or parathas
