      Vincenzo, my friend...cooked your spaghetti and meat balls tonight! It was an OMG moment! I didn't have veal so I used ground chuck instead. I made the meatballs a little larger, but they turned out wonderful! Boiling them was a wow factor moment! And your sauce...another OMG moment! I made the pasta from scratch, Eva's egg pasta only I didn't have ALL PURPOSE flour...uuugh! Do not use white wheat flour, it's not white and VERY gritty. It wasn't bad...but wasn't good either...lesson learned!
      The dish in a whole was for me and wife...the WOW FACTOR!!! Sorry for the long comments. Bravo Bravo! My "OLD RECIPE " is nothing like my Army Noddles and Ketchup like...lol...yours is OUTSTANDING!!! And so simple! Big double thumbs up from the wife! We Love you my friend. Can't wait to try other dishes!

      Both you send Eva make it the same. Eva makes it, like you've shown, by hand without the pasta machine. Only by hand...which is fine. I'm retired and LOVE ITALIAN FOOD! Can't get enough!!! Thank you so much.

    Thanks for the video. I wasn't sure how thin to make the tagliatelle - your tip on seeing your hand through the dough was a good one. We made it with Marcella Hazan's Bolognese recipe and it was fantastic!!

    Bravo! After using a pasta machine like that for 50 years, we switched to using the KithenAid attachments. What a time saver! I rolled out enough pasta for three pans of lasagnas in about 40 minutes.

    I did a better job this time with my pasta dough but it seemed a little chewy instead of nice and soft.
    I realised later that the dough needs to be thin. Does that explain the ruined texture?

    I’m loving your videos, and I basically live off of pasta now. I had a question about making pasta though. I was wondering if I could knead in an herb like basil into the dough, I had it in a restaurant once and I thought it was good, but I was wondering if that would be okay.     Hello Vincenzo, is it possible to dry the fresh Pasta? And if it is possible should I double the cooking time then from 4 to 8 minutes? Thanks alot!

      Of course you can dry the pasta!
      it depends on the cooking times, I can't tell you the exact time, just taste it before taking it out!

    What difference it makes when we make dough with semolina and without semolina?

      They are 2 different products.
      00 flour (or all purpose flour) is a soft flour
      Semolina is Hard durum wheat

      yes, there are types of pasta made only of semolina flour and water!

      1 - did you put salt into the boiling water before the pasta?
      2 - maybe it's the eggs, or any kind of contamination in the table, could be salmonella

    Pretty much how I’ve been making my pasta for the last 20 years, except for taking it out with tongs. I have an insert for my pot that fits perfectly inside that’s full of holes so you can just grab the handles & lift it out. There is NOTHING like fresh, homemade pasta. You will never buy pasta in the shop that’s better than what you can make at home if you just follow these simple instructions.

    Hi Vincenzo i'm tryin to make pasta but i'm still unsure about what flour to use. What do you think I should use, half Semolina/All-purpose or half Semolina/Bread flour?
