Aubergine & Lamb Curry Recipe | Baingan Gosht | Eggplant & Lamb Stew

Ingredients
• 300 grams of lamb on the bone
• 2 medium chopped onions
• 2 medium chopped tomatoes
• 1 heaped teaspoon of ginger and garlic paste
• 1 teaspoon of salt (or to taste) [for the lamb]
• 1 teaspoon of red chilli powder
• ½ teaspoon of turmeric (haldi)
• 1 teaspoon of ground coriander powder
• 2 large aubergines and 1 teaspoon of salt
• 4 tablespoons of cooking oil
• 1 teaspoon of garam masala
• A couple of fresh green chillies (optional)
• A handful of fresh coriander
