I love Cabeza I even like lingua but give me Some Sesos and I will eat that brain taco all day long I love Sesos but not to many people serve the brain alone and it has to be done right light and fluffy otherwise it’s not good but bad.

It needs it. Salt is good for you. You need to use a good sea salt with all the mineral’s. So important for our bodies. People are having serious health issues not using a good quality salt.

Looks great! My only suggestion is to bring meat to a boil and skim off scum BEFORE adding the floating ingredients (onions, garlic, bay leaves). That way you can remove the scum easily. Immediately after skimming off the scum, add the floating ingredients.
That’s an excellent suggestion, I must say, communities in Mexico have a different way of doing their own recipes. In my family, we do this recipe as you suggested. And for sure , so many other families. But thanks and I am not being sarcastic at all.✅ greetings from Arkansas
