Community note: Ender pearls load a 3x3 area if chunks, the centre chunk receives entity ticks (e.g. sheep will eat grass and grow wool), the outer chunks only receive redstone ticks (redstone works, but a sheep doesn't do anything).
There's some confusion in the episode around pearls disappearing. They unload when the player associated with them logs out. They reappear when they log in, so chunks you loaded, only load while you are online. Multiple players can set up loaders in the same chunk so it won't unload unless all are offline.
They will disappear on death, this can be switched off with a gamerule.

I'm doing the opposite - A Java player, trying to get into bedrock to play with friends. And just. how do you cope without offhand?! The render distance is glorious though!
As someone who has only played bedrock, I've never been able to have an offhand so I can't miss what I haven't ever had. But I will say we make do. When it comes to healing tools I put the tool I want to heal in the slot right next to the thing I'm using to kill the thing if that makes sense? Then once the thing dies I switch to the thing that needs healing. As far as all the other useful things for having an offhand, please Mojang give us the offhand! 😅
Yep, like Viking said for healing tools; I sometimes like to use a Splash damage potion since there's no Entity Cramming, so I accumulate a bunuch of mobs and kill them with the potion to get tons of XP.
Or, I use the best Bedrock exclusive - Trident Killers!!!
I always love how easy Bedrock is for multiplayer. Java just can't compare to the ease of use, despite it having so many more gameplay QOL features
