    NAVRATAN PULAO
    Preparation Time: 15 minutes
    Cooking Time: 20 minutes
    Serves: 2
    Cuisine: Indian
    Course: Main Course
    Ingredients:-
    2 tbsp Ghee
    1 tsp Cumin seeds
    1 inch Cinnamon
    2 Bay leaf
    2-3 Cloves
    3-4 Black pepper
    2-3 Cardamom
    2-3 garlic cloves, chopped
    1 small Potato, small cubes
    1/4 cups Cauliflower florets
    1 medium Carrots, peeled, cut into cubes
    1/4 cups Green beans, cut into cubes
    1/4 cup Green Peas, boiled
    1 cups Rice, cooked (80% cooked)
    Salt to taste
    1 tsp Lime juice
    1/4 cup Saffron Milk
    Other Ingredients:-
    1 tbsp ghee
    7-8 Cashew nuts, halved
    2 tbsp Almonds, keep the whole
    4-5 Walnuts, cut into half
    2 tbsp Golden Raisins
    4 Dates, roughly chopped
    100 gms Paneer, cut into cubes
    Process:-
    ● Heat ghee in kadhai and add all the whole spices. Saute for a minute.
    ● Add ginger and garlic paste and saute for further 2-3 minutes until it release the aroma.
    ● Now add all the vegetables, salt and give a nice stir. Add ¼ cup of water, cover and allow it to cook until vegetables turn soft.
    ● Meanwhile take another pan heat ghee. Add cashew nuts, almonds, walnuts, raisins, dates and saute for 2 minutes on low flame. Now add paneer cubes and saute for another minute.
    ● Now add rice to the vegetable mixture. Give a nice stir. Adjust Salt.
    ● Now add sauteed dried nuts and paneer mixture. Sprinkle lime juice and mix gently.
    ● Now add saffron milk, cover and simmer for 10 minutes.
    ● Serve immediately.

      Wo bhi galat 🤣🤣.
      According to mayrhofer the pulav n biriyani's origin was Deccan/ u may call Hyderabad now. Ironically mongol is known for no crop cultivation. Because of long winter n low precipitation there's no possibility to cultivate any crop on it. So how would they bring a rice dish 🤣🤣🤣. He further added the word birinj from persia came from Sanskrit word 'vrihi'. Pulav was very popular dish already, in the late 16th century. Where mugal dynasty was established in early mid 17s

    Was exhausted after a tiring day at work. Wanted to eat pulao and no food services are available. So watched your recipe on a loop. Cut whatever vegetables I could find, and imprpvised your recipe... ended up making "11 ratna pulao". My 90 year old grandmother, me and dad gobbled up the whole thing without even considering taking a pic. Thanks Ranveer!!! Absolutely loved it

    Recipies are good n there is no doubt about that but I was not aware of the fact that history behind food can be so interesting. Besides cooking you taught me how to present your story. Have seen many chefs and have tried a lot of recipies but believe me no one can teach cooking in such an interesting way. Your all time fan. You justify everything you do. Love to watch you cook.

      That's the beauty of his show.. He doesn't want to tie you with a list of ingredients. He gives you technique and few key ingredients that's all.

      To cock a proper Naan you need a tandoor, but their is one way to do so

      1st atta gund lo.
      2.chapatti bnao, thicker the usual
      3.take chapatti in hand and hath gilla karke halka sa roti ko. Gilla karo.
      4.gilli side ko garam tava par rakho and tava ko ulta karo or dry side ko direct agg se garam Karo.

      To give the smoky taste of over you can take a piece of hot coal in a small catory/bowl and then add ghee then, keep naan along with that goal under a lid for a min.

    The texture of the pulao was good until I poured the kesar milk. Any one had the same problem??

      To keep the texture perfect use par boiled rice, then kesar milk will cook it perfectly.

    Here is a constructive criticism.
    Muaf karna bhai, the camera is too much on the face of the chef. It should be 95% on food preparation. Since we can hear his voice, it’s okay to see his handsome face once in a while. Majority of the time please keep it on food. Pretty annoying not to see what’s being done with the food.
