I made these for dinner last night with some shrimp on the side. My 3 son's loved it! So delicious my baby boy saw me put the filling back in the shell and was like Mommy you're so smart that was a good idea! I saved this recipe 2 years ago and I've made these potatoes countless times since. My 10 year old son is a picky eater but he loves these potatoes. I love how crispy the skin gets. Its delicious! Charlie, you need your own show on the Food Network!!

I like to be more liberal with the olive oil and roll the potato in lots of corse sea salt for the initial baking. skin taste almost like soft pretzel when you do that. I also push on the ends of the potato to open up the middle before finial preparation so less of what your adding falls on the plate.Man , so much better than fries!.

Charlie, I've had both twice baked potatoes and baked potatoes with butter and sour cream and chives, and I've seen pictures of fully loaded baked potatoes before, but I don't think I've ever seen anything like what you have made in this video. Finally prepared the twice baked potato recipe for tonight's dinner, and....Boy, oh, Boy was it good!! I had always wondered how restaurants make twice baked potato. Thanks for the simple instructions, which were very easy to follow. And, the end results was delicious. You are the BEST!!!
PS: Also, I cooked the smothered pork chops, grown gravy, rice, corn, potato salad this past Sunday dinner, except I substituted turkey fillet instead of pork, as I don't eat red meat. That dinner was a big hit in my family!!

Charlie I worked for Piccadilly Cafeteria and we made Twice baked but did it a little different ( due to mass production). I tend to like your better. Looks awesome.
