    ► Lumpia
    1 lb Lean Ground Turkey
    1/2 cup Carrots Minced
    1/2 cup Yellow Onions
    1/2 cup Green Onions
    4 Garlic Cloves (Minced)
    1 Tbsp Coconut Aminos
    1 tsp Fresh Ginger
    1 tsp Salt
    1 tsp Pepper
    1/2 tsp Smoked Paprika
1 egg whipped for sealing spring rolls
25 whole wheat lumpia or thin spring roll wrappers
    ► Directions (Prepare Filling) - Part 1
Using a food processor, mince up the yellow onions and carrots. Mince up 4 cloves of garlic
Saute garlic, onions, and carrots in a medium sized pan with 1 tbsp of oil on medium heat for 3 - 5 minutes. Add a little water to soften up the veggies at the end. Then set aside to cool down.
While cooling, mince green onions and set aside.
Once cooled down, prepare a gallon sized zip lock bag or container.
Place 1lb of turkey along with salt, pepper, aminos, and smoked paprika.
Zip the bag and kneed/massage the spices into the meat
Open bag and add in the green onions and sauted garlic, carrots, ginger and onions into the bag and close and kneed/massage into the meat.
Place in Fridge for 4 hours to overnight to marinate
► Directions (Prepare Filling and Bake) - Part 2
    Preheat Oven to 450 F
Cook marinated meat in a medium sized pan with 1 tbsp olive oil on medium heat. Drain out any left over juices.
Let meat cool down before putting them into wrappers as the heat and steam will compromise the roll
Take out frozen lumpia wrappers and place a wet towel on top to keep them from drying out.
Once filling is completely cooled, Add 1 tbsp to the spring roll wrapper and roll it up and seal it with the egg wash
Keep rolling until your desired amount of egg rolls or when you run out
Brush each one lightly on all sides with olive oil
Bake for 18 - 20 minutes in a standard oven until brown and crispy
    Enjoy!
