What came to my mind instantly was the mix of corn starch/flour/potato dumpling powder you used for your crispy onion rings. I have this mix ready-to-go ever since. And a dipping sauce I just made consists of hot mustard, some soy sauce and ketchup. My mom (90) cannot handle pepper anymore. So I have to "work around that". Despite the hot mustard (Löwensenf): it worked out amazing! No cooking. Easily adjustable. Goes with heaps of things. Greetings from the far north of Germany!
I'm going to add a dollop of Dijon to the nugget blend for emulsification. And a touch more oil will make it ideal for an air fryer (and use/consume less than a shallow fry.) I've learned so much watching you over many years Chef. Thank you

Looks good, except for using Vegetable Oil. I will make it, but I'll deep fry in Tallow or Avocado Oil.
