  • @hplagt6880
    @hplagt6880 3 года назад +3

Im from Kuching, Sarawak and Sarawak laksa is my favourite. Our laksa doesn't have fish nor prawn paste. The paste consists of a lot of herbs like cumin, corriander, ginger, galangal, etc but a good broth is infused with chicken bones and prawns with the shells still on to get that rich flavour. Actually, there is a sambal that goes with the laksa. And the sambal you squeeze with a bit of lime. Glad you liked Sarawak Laksa. So now you know why Anthony Bourdain said it is the food of the Gods.
Sarawak laksa is unique because to make it you have to buy the paste which is hard to replicate at home because of the variety of spices used in order to get the right amount and consistency in taste.

On the whole "Fettuccine vs Spaghetti" debate: Due to not having spaghetti at home, I have substituted with macaroni (holds sauce nicely), angel hair (cooks faster), and even fusilli (fun twist if u get the 3-colour one). It's the kuah/sauce really that makes the difference, in my opinion. My brothers even "innovate" it up and throw some cheese into that mix (it's actually not too bad). I have however been served Laksa Johor at a restaurant with the correct kuah laksa but mee kuning (yellow noodles); now THAT...that I regret brought out my inner Karen and a manager needed some talking to.

I think Laksa Sarawak dont have fish. Just the heads of prawn slow cooked in black pepper.
Also all noodles (dry and wet) usually eaten with spoon/fork or Chinese spoon/chopstick.
There are only few laksa types in Malaysia (correct me if I am wrong)
    Assam laksa - Northern states
    Laksam - East Coast
    Laksa Johor - Johor
    Laksa Nyonya - Melaka
    Laksa Sarawak - Sarawak
All fish based except Laksa Nyonya and Laksa Sarawak.

Hi, I’m from Sarawak.Glad that u guys love our Swak Laksa. I always cook Swak Laksa whenever I miss home. There is no fish or peanut (satay sauce) in our laksa. We boil 🦐 heads & shell for the broth as well as mixture of spices with coconut milk. You must squeeze the lime with the sambal belacan & mix them in the gravy. Yum 😋 Btw, Steve I’m just like u I can’t take ‘fishy’ dishes 😅

So you think east coast share one laksa.? 😂 ignorant. let me educate you. first of all, laksam is not considered laksa in east coast. any OG here would say that. they'll laugh in your face if you say laksam is laksa. LOL and only Terengganu have a proper laksa with 2 different broth. Kelantan doesn't have one, only laksam. Pahang "laksa" is straight up Terengganu, just less rich flavor.

Sarawak Laksa is not Curry Mee. Sarawak Laksa - You should feel the warmth of the blended herbs & candlenut in the soup. Not fish based but chicken & prawn stock base.
Johor Laksa - fish based. The white thing is not garlic. It's salted preserved radish (Chai po). Johor Laksa is normally eat with spaghetti.

it will be more authentic if u try laksa in sarawak. bcos mostly in west malaysia, the ingredient need to be post over. not like in sarawak where everything is local. and yeah, sarawak laksa is more based on prawn and coconut milk instead of fish.

Pasta noodles are used in laksa Johor which is traditionally eaten using the hand. Laksa Johor sauce like spaghetti bolognese sauce should be viscous enough to just coat the noodles. Read in a book on food history at the university library that street vendor spaghetti was initially eaten by Italians in 1800s using their hands. VIctorian English tourists paid money to see Italians lift their spaghetti over their heads to gracefully lower the spaghetti into their open mouths.

There's no fish at all in Sarawak Laksa. It's usually some sort of protein and iinm shrimp. It's the spices that also makes it unique and I believe that "sour" note is coming from nutmeg, which is quite rare in cooking in West Malaysia. Such a shame you guys could not travel to East Malaysia. It really does feel like another country altogether.
