Ingredients:
2 cups all-purpose flour
2 tablespoons semolina (optional, for extra crunch)
1 teaspoon carom seeds (ajwain)
1 teaspoon salt (adjust to taste)
2 tablespoons ghee or oil
Water, as needed for kneading
Oil for deep frying
Instructions:
In a large mixing bowl, combine the all-purpose flour, semolina (if using), carom seeds, and salt.
Add the ghee or oil to the dry ingredients and rub it in with your fingertips until the mixture resembles breadcrumbs.
Gradually add water, a little at a time, and knead into a firm dough. The dough should not be too soft or too stiff.
Once the dough is ready, cover it with a clean kitchen towel and let it rest for 15-20 minutes.
After resting, divide the dough into small portions and roll each portion into a thin circle or rectangle.
Use a knife or pizza cutter to cut the rolled dough into small diamond or rectangle shapes.
Heat oil for deep frying in a pan or kadhai over medium heat.
Carefully slide the cut Namak Pare into the hot oil, in batches, and fry until they turn golden brown and crisp. Stir occasionally for even frying.
Once fried, remove the Namak Pare using a slotted spoon and drain excess oil on a paper towel-lined plate.
Allow them to cool completely before storing in an airtight container.
Your crispy and delicious Namak Pare are ready to be enjoyed! Serve them with a hot cup of tea or your favorite dipping sauce.
