    Ezinne I applaud you for this video. I remember making agidi almost every Saturday because we had a big corn farm and didn’t want the dried corn to waste. It is a lot of work and you made it look so easy 😁. It came great. Paired with beans, veggies soup or ogbono soup is heavenly. 👏👏

    Beautiful experiment that's absolutely how to know if your Agidi is perfect testing it in cold water.
    And the enemy of Agidi after it's perfectly cooked is Salt once it comes in contact with salt and you are not ready to eat it...it will start melting or go bad gradually.
    Did anyone agree with me?
    Pepper soup and Okra is my favorite to enjoy it with.

    • @ezinneskitchen
      @ezinneskitchen  4 года назад

      Wow! I only know of Akamu, when it comes in contact with Salt, it spoils, i never knew it's same with Agidi🤷‍♀️, Nnem thanks so much ❤️ ❤️ 🥰

    • @faithvibes09

      @@ezinneskitchen Yeah Akamu is the same corn and starch so is applicable to Agidi. .try the experiment if you still have it.

    It think you could also go straight to cook the filtrate without waiting for it to settle. The water could easily serve as the water you would have added to make the starch gel, however, I believe you took that 3 hours step to avoid exhausting much electric energy while the water evaporates. Well done though, you started yours from the scratch which is good for someone who can't readily find corn flour.
    I want to try this with rice flour to see what the outcome would be.
    I'm not missing Nigeria, though, but I miss my typical Enugu red oil, Anambra ogili, and a handful of other local spices I cannot get here.
