Very interesting!! We use the same combination of detectors, i.e. a GPZ for depth, combined with a Goldmonster as pinpointer and for narrow spots in creeks of the Swiss mountains. To break up chunks of clay like you have here, I bought a inexpensive concrete mixer, put some rocks in it, plugged it into a generator, filled it with the hard clay chunks and turned it on. It breaks up the chunks and not the gold. pour it out and detect or run through a dry washer.
