thanks! I think I'll try this tomorrow. Would adding an egg perhaps help to make more cookies, and maybe help retain their firmness when coming out of the oven? I think I'll try adding an egg to the recipe. I'll let you know how they turn out.

I have not tried altering the ingredients at all. I think these cookies are delicious and with just 4 ingredients, they're very easy to make. I make these 2 or 3 times per week.

@@LetUsTryThat So I made a batch this morning, with the added egg. They are delicious. I did not try the recipe without the egg, so I can just compare to how you describe them in your video. I was just curious as to see how different they would turn with an egg, compared to your results. I don't think there is much of a difference in the consistency, but because I added the egg, I also had to add about half a cup more of almond flour and a bit more erythritol. I managed to make 30 cookies. Baked at 365 for about 12 minutes. The result out of the oven is the same as yours, let cool 10 minutes before touching/moving because they are quite soft. Even as they cool and firm, they do not become hard. Thanks for the recipe!

regalianpeaches1 Sounds like the added ingredients yielded 50% more cookies. I wonder if the egg changed the flavor at all. Of course, I don't want to mess with a good thing. This is one of my go-to recipes because it's really tasty and easy to make. But thanks for the update on your experiment. 🙂

@@LetUsTryThat I don't taste the egg... they were very buttery. I was just in need of a keto butter cookie recipe cause my daughter made some regular butter cookies two weeks ago and I ate a few.... and that triggered cravings, which I don't usually have. These cookies are more filling, I feel. perhaps it's because you don't get that sugar high? Anyway, I will make some again next time I have cravings... I can't make too much with almond flour because of the high oxalates. I think next time I will try it with coconut flour. I think I'll need less flour because the coconut flour is more absorbing... I guess by now you figured I like experimenting with ingredients lol... If I do that I will let you know also how they turn out. Won't be for a while, though. Take care!
