Hello, I’ve been making macarons for a few years now (learned while in COVID). I’ve had many successes and some failures. Lately I’ve not been successful in keeping the bright colours of the shells. I saw your video and was excited to try your method of adding the gel color into the batter and not into the whipped eggs/sugar mixture. I also tried your suggestion of baking on two baking sheets. Sadly neither of these methods worked and my shells, which were a bright yellow before baking, are now a muddy color. Do you have any ideas on how this happened? Thank you.
Hello, I tried making the mango curd this afternoon and I noticed that in the video it appeared that you used 3 egg yolks but in the provided recipe it calls for just 2 egg yolks. Also the recipe calls for the addition of 1/4 tsp. of sea salt, but it didn’t show in the video you adding the salt. My curd is in the fridge cooling so I will hope it turns out okay. Thank you.
Hello, in the video you say to bake the macarons in a 325F oven for 15-20 minutes. In the printed recipe for the macarons, it says to bake the macarons in a 300F oven for 15-20 minutes. Please clarify which temperature is the correct one. I look forward to making these macarons with my godson. Thank you.
It changed because I moved to a different house. So each oven will be different. You’ll have to experiment with your oven and see what’s the optimal temperature. If you have a conventional oven (not convection) I recommend starting at 300 Fahrenheit or so, 10 or 5 degrees more or less and go from there
Please help .. For some time I haven't been able to bring the dough to the right consistency. The longer I mix, the dough gets thicker ... Meringue had a stiff peaks, dry ingredients sifted 3 times ... Would be greatfull for suggestions 😔

Result: the batter was still dense and could not be brought to the correct consistency. - my second try: the same almond flour but this time without using egg whites powder. Result: the batter was of the correct consistency. So the culprit of the failure could be the use of egg whites powder? I'm really confused....

Can I use Wiltons Meringue powder for the egg white powder? It says it is Egg white powder but not sure because it also says Meringue powder.
