Easy to Make Hot and Sour Soup

  • Hot and Sour Soup
    This savoury soup is hearty and sure to warm you to your core! It hits so many flavour notes that it is sure to satisfy! Let me know what you think…
    Ingredients:
    4 cups broth
    1 pkg of tofu, firm or extra firm
    1 - 227 g/8 oz pkg mushrooms
    1 can baby corn
    1 can bamboo shoots
    1 can sliced water chestnuts
    3 tbsp tamari or soy sauce
    3 tbsp rice vinegar
    1 clove minced garlic
    1 tsp minced ginger
    3/4 tsp black pepper
    1 tsp sesame oil
    3 tbsp cornstarch
    1/2 cup water
    Instructions:
    Cut tofu into small bite-sized cubes and set aside.
    Cut mushrooms into slices and set aside.
    Chop baby corn into pieces and set aside.
    Optional to slice the bamboo into thinner, julienne strips.
    Optional to cut water chestnuts in half.
    In a separate bowl, whisk together cornstarch & water and set aside.
    Into a large pot, add all ingredients (except cornstarch & water mix) into a large soup pot; vegetable broth, tofu, mushrooms, baby corn, bamboo shoots, water chestnuts, rice vinegar, ginger, sesame oil & black pepper. Stir the ingredients and simmer gently.
    To the cornstarch mix add some of the vegetable stock and stir it in. Add this mixture to the soup pot and allow to thicken. Simmer gently again.
    Note: This soup is quite hot in temperature. Allow to cool for a little bit before eating.
