    Ingredients
    1 pound split peas, green or yellow, rinsed and sorted
    3 tablespoons butter
    1 onion, chopped
    2 ribs celery, chopped
    2 carrots, chopped
    1 meaty hambone
    1-2 cups small diced ham use 2 cups if not using hambone or your hambone has no meat on it
    1 small potato, diced
    6 cups chicken or vegetable broth
    2 bay leaves
    ½ teaspoon paprika
    pinch of saffron (optional)
    pinch cayenne, or more for more heat
    1 teaspoon garlic powder
    salt and pepper to taste
    parsley, chopped, for garnish at the end (optional)

    I love pea soup, but hardly make it anymore. I used to practically live off pea soup and rice and I was in the best shape of my life.

    Not sure if you will see this two years later lol, but I’m making it tonight! I always change a recipe but from a chef perspective it looks perfect and not changing a thing! I’m doubling it even! I do have homemade chicken bullion I’m using ❤️

    This actually looks really good. I am a meat eater but there's something about a hearty veg soup with bread that just speaks to me.

    Good looking soup my friend.
    Over here in Holland I normally use finely cubed porkbelly (pre cooked to low medium crispy) and saute the veggies in the rendered fat from the belly.
    Adding the extra spices like the paprika and safran is something we over here normally do, but on my next splitpea cook I'm definitely going to make a hybrid version.
    And at the end top it off with some smoked sausage and some fine bread and butter.

    Split pea soup is my favorite and the last several years it is even better because of my pressure cookers! I have made it many different ways, changing the herbs, bacon, ham, ham hocks, even chicken. I have sauteed the veggies beforehand and I have just thrown them in and it doesn't make enough difference to me in taste. But I like my veggies cut really small almost like a sofrito. So I usually put the onion, celery and carrots in the processor. I like the sweetness from the carrot and I always try to get celery with lots of leaves. So that is my opinion on sauteing them.

      @@JaxxDrinkwater We have a winner! We used a double smoked farmer sausage instead of ham and the flavour was impressive. Ham gives a sweet note and the sausage gave a more robust flavour. We cooked for 6 hours in the slow cooker on high setting. The potatoes were too firm at 4 hours and at 6 hours the potatoes were a little too soft. 5 would have been about right. (we were out so 6 it was..the house smelled so good when we got in). Thanks again for the excellent idea and video. 8^)

    After cook time you open up IP pot and find you want it thicker you can add a grated potato cook for 5 minutes.

    Nicely done recipe Jaxx. I bet it took for ever when you had to split on the peas, lol. Some reason my wife doesn't like peas. I miss cold pea salad! Oh yea, that looks really good Jaxx. A good winter soup!

    Made this yesterday and taste is superb but peas came out completely mushy. Is this normal? Was thinking they should be whole still and soft, not mashed. Did 15min on high pressure, 15min natural release, then relieved pressure and opened.

      No, that is completely normal for split pea soup. Green split peas are not like whole, round peas you buy frozen (or fresh or canned). They will lose their form no matter how long you pressure, but because they are dried, you need to cook them long enough to get them soft and once that happens, they begin to break down. It's just the nature of the beast.

      I wouldn't say it gets lost, but you can leave it out and have no worries. If you don't have it laying around or you're saving it for something special, just leave it out and go forth!

      Ester Lund - Pretty sure he used the better than bouillon chicken flavor because he kept referring to using chicken stock instead of water if you didn’t use the better than bullion earlier in the recipe.

    I added 2 cups of milk after cooked, then blended it with my hand blender, then added ham. Saffron was a new touch for me. It is perfect split pea soup.🤗

    U do t need to sauté! I’ve been making it for many years and I dump everything in including raw bacon! Cook it all at once.

    Let's say I don't want or don't have the vegetables and just want the split peas alone.. how much liquid for 1lb of split peas should I use?

      I'd cut it by maybe a 1/4 cup.. If it's too thick you could always add more liquid at the end of cooking.

    Sauteing the vegetables releases the sugars for a better flavor.

      Jamelle, when it's in your pot, it's your soup - I encourage you to release those sugars and saute your veggies if that's how you like it.

      It's a very good thing this video is not about facial hair but about split pea soup. Also, off topic comments and facial hair comments in a food video is a total turn off.
