In the last couple of months I added cheese back because I was craving them and they seemed better for me in the long run over vegan cheeses which I am often allergic to because of the coconut oil. You have motivated me to try again. I hate wasting food, so when the cheese is done I am not replacing it :)

My doctor wanted to put me on statins after I followed a keto diet and my cholesterol was dangerously high. I asked to give me a chance to eat WFPB and my doctor agreed to wait a few months and test my blood again. After six months, I lowered my numbers significantly just by eating WFPB oil free that my doctor had no more concerns and told me to keep doing what I'm doing. I agree with you that working out is also important. It is so difficult to incorporate with my early morning work day (and I'm exhausted when I get home!) with exercise, but you are correct that waking up earlier and going to bed earlier is likely the solution. Thank you for reminding us that movement needs to be a priority as well.
Thanks for sharing all the tips. You talked about waking up early to exercise. This never worked for me but when I started waking up early to start a new morning routine that finally worked! I get up early, 4:30 but I do not exercise until 5:15. I no longer wake up early just to exercise, I would roll over and hit the snooze instead. With the change I made I have exercised everyday for the past 2 years, finally!
