Im going to make another batch tomorrow. I added shallots though and added just a few small dashes of cumin. I used that same menudo mix. So good, thanks for sharing!

It’s literally 102* here in central California. But today we finally got around to trying this recipe. Let me just say this was super simple and it was delicious. We got it set and going and went about our Sunday chores and errands. When we finally slowed down it was ready to eat. Amazing, simple, and delicious!
Hi. I love pozole and have been craving some lately, but can't eat it because I have liver cirrhosis. 😭😭 Let me share a trick/tip with you for removing the fat. Freeze a metal spoon and then run it over the pozole or menudo and it will stick to the spoon. Remove it with a paper towel and insert spoon in ice water a couple minutes and run it over the pozole again until all fat is removed. Hope you try it! 😉😉
It might take longer but anytime you refrigerate a brothy soup all the fat will go to the top and you can take it off as a solid form then. I always do this whenever I make stock.

It is more economical for a small family on the go (sports) or elderly persons. Chopping the veggies and having them ready is a good idea too. I also use both white & gold hominy in the soup when I make chicken pozole. 🥣
I have made Pozole from scratch for years then I tried it in my slow cooker and it worked perfectly! It also works in the instantpot! I’ve made it on the stove too…! I make the chili sauce from scratch too.

Thank you for this recipe. It brings me back almost 50 years when my mom had made it once. I thought even as a child it was the most wonderful meal. I remember the meat being in the pressure cooker and hearing it whistle with what seemed like hours. I remember the homony, and I remember the shredded cabbage, chilled with a wine or balsamic vinegar. I've always wanted to make this dish over the years, and now I can, an easier way! My mom would surely be smiling from above!

I used red enchilada sauce short cut as suggested by Chef Rick Bayless years ago with success. Now I'm curious about the Fiesta Menudo spice mix and will look for that. I'm willing to try this in my son's instant pot, but I don't have any pork. Will it work with some beef chuck pieces? Maybe if I half the liquid, 2 1/2c (we have the 6 qt, I think)? I'm thinking if I use the stew setting for about the same amount of meat, 3-3 1/2 lbs? I know that I successfully made beef birria in it with just over 6 lbs of chuck roast and I added 3 1/2 c of water, + the rest of the ingredients.

My dad would use a can of enchilada sauce with a bit of El Pato sauce to shortcut pozole. Works in a pinch if you can't find menudo packs!
