Made this last night and it was delicious!!! Best mac and cheese I have ever tasted and bf loved it too. Cheese was really thick so I added milk in it until it was more of a sauce consistity. I probably added about half a cup to a cup of milk. And I used croutons for the crust since I couldn't find bread crumbs. I just mashed it up :)
This recipe has been a staple for Thanksgiving and Christmas for at least 10 years. I’ve tried her updated recipes but this one is still the best. The Holidays isn’t the same without it and I have you to thank Laura❤.
I've made this but with swiss and provolone. Also made a version with shrimp, another with chicken and mushrooms, and a veggie one with broccoli. Awesome and delicious.

Xoch I have been making Mac&Cheese since my mother taught me how just before I left home, 40 years ago. I bought a packet of Kraft Mac&Cheese once when I started living alone because I thought it would be easier and quicker. It wasn't that much easier, but it was a bit quicker. But it was HORRIBLE compared to the way my mother showed me. Tasteless and the texture was awful by comparison. I agree with Laura - you'll never go back to that Kraft stuff again once you make her recipe. Think of this ... when you make your own food from scratch, you make it with quality and flavour and nutrition first in mind. When Kraft makes it, they make it with price first in mind. Flavour might not even come into the equation, for all we know. Based on my experience I'd say flavour doesnt come into it at all for Kraft.
Laura I've made quite a few of your recipes and I hope you won't mind if I say that baking this mac and cheese is a huge mistake and really doesn't do it justice! Baking pasta (especially for nearly 30 minutes) dries up/toughens the noodles and the gooey cheese sauce significantly - you get way less cheesy results, not to mention leftovers like shoe leather. It was my dad that put me on to this tip and I've never looked back. I now make your mac and cheese totally without baking - I just pop it under the broiler for about four minutes (or less - gotta watch it carefully) to crisp up the topping. Perfect! Try it this way and I think you'll find it's a big improvement :)

The best mac and cheese ever! For the crispy top I add a little bit of garlic powder along with the olive oil, parm and breadcrumbs and it makes the biggest difference! So delicious, thank you laura this is a staple in my house now and SO easy to make!

Amazing recipe Laura. Made my first bechamel sauce and thought it would be hard but it went great! I added mushrooms and smokey turkey to my pasta instead of pancetta and it was delicious. This could be a great last minute dinner idea since i usually have all ingredients handy and it can be modified to no end. Thank You!

For a healthier version you could substitute whole milk with skim milk, use whole wheat pasta and low-fat cheese. You can also replace butter with low fat margarine and skip the bread crums and (of course) bacon. In place of bacon you could try diced chicken breasts and add some spices to the roux to give the sauce extra flavour, for example thyme, bay and walnut. Also, when adding the cheese, do it in a couple of times so the sauce doesn't break down. I'm trying to become a cheff but i'm also concern about health so I hope my tips help :) That's what I do and it still taste great! Sorry for my english and greetings from Argentina!
