You need to slow-fry onions till they are brown to bring out their sweetness. Then grind it to a paste. You need to slow-cook Palak puree in ghee with Laung+Black Pepper+Cinnamon till the water evaporates. Then mix the two & continue with the other steps of your method.
Why you boiled the paneer i usually add separately oil in pan little bit and add paneer after it turns golden i add the paneer cubes to the gravy i want to know does this make any difference not frying it and boiling it?

What did you put in the water before boiling spinach?
light fry paneer before adding that to palak gives a little more taste to paneer
Also the light color palak paneer does'nt taste good it taste like raw or that not well cocked taste which is very bad or irritating
