Key points for each vegetable:
*Red onions: Slicing thinly and uniformly along the fibers creates a beautiful finish.
*Carrots: Peeling the skin with Katsuramuki and then carefully shredding results in a uniform and beautiful finish. The angle of the knife and the movement of the hand are important.
*Bell peppers: By cleanly removing the seeds and stem, you can cut them neatly without waste. Removing the white pith inside also makes them taste better.
*Green peppers: By thoroughly removing the white pith (including the seeds), you can reduce bitterness. Cutting across the fibers allows you to create a crispy texture, perfect for stir-fries.

The food processor doesn't cut the vegetables as you do manually.i have Bosch food processor and I cut vegetables myself as required.

А оказалось, повара режут красиво, пока это удобно. Когда уже неудобно, они сбрасывают все остатки в кучу и используют для овощных бульонов. Это называется высокая кухня😂

Всё очень красиво, но... столько отходов! Особенно - болгарский перец! Куда дели всю срезанную мякоть?
Вообще-то в европейской кухни мякоть перца тоже срезают. Потом ее можно использовать в бульонах. Все равно бульон после приготовления процеживают

May i know that the difference between japanese brand knifes vs German knifes?
In the old times people used the ore they found in their country and got the natural alloy, so steel from sweden was tough, from germany stainless, but today most knives are build from stainless steel D2/1.2379 up to HRC61 and are the same, worldwide. But not every knive, some exotics try to get harder, some sharper but not stainless, others try to mix alloys (Damast), some even use ceramics. But nothing is universally better, every variant came with a drawback. German knifes are inexpensive and sufficient, japanese often try to be exotic expensive but are only better at specialized work. Some have thick blades that are able to cut even other knives blades, but are useless for kitchen work.
Ask which knive your mass producing butcher uses, that is cheap and handles well.
As for the carrots, how about demonstrating knife skills with a carrot that is crooked/bent as so many are?

Думаю, что срезая середку у перца, сильно теряете в полезности. А срезанное выкидываете?? Или применяете в других блюдах?

Different vegetables have different hardness and fibers, so there are knives that work best for each. However, you can still cut them with the same knife without any problem.
