  • I was taking inventory of all my knives and realized that they were all western style! I needed to change that so I decided to hunt down a Chinese cleaver! Join on my jounrey around chicago to find a brand new CHINESE CLEAVER

    If you are still interested in using Chinese style cleavers, there’s one that is highly regarded in the commercial industry as well as domestic and most would consider it to be the standard when comparing all cleavers. The cck1303

    I think the popular one right now is "Shi Ba Zi Zuo" or just "Shibazi" particularly the P01 and F208 models
    I'm not fond of CN products/brands but the angle at which you cut really feels natural compared to Japanese/Western knives

    the price out of factory for the china town one is about 1.3 USD, later one without polish should be 2.5 USD, but with that shining face is about 30 bucks. yes.

    How are they holding up? Have you thinned the cleavers? Which has harder steel? 😁

      I use the carbon steel cleaver a lot more than the one from Chinatown and it is holdoing up really well. I Don't know what type of steel the one from Chinatown is made of but carbon steel is a pretty hard metal so Im assuming that is harder than the one from Chinatown

    What brands are they? CCK 1302 or 1303 have great grinds but are a little more expensive. Always look for distal taper...thicker at the handle...tapering down to the end. You'll find they perform and balance much better. Most current brands don't taper at all...they're just a slab of sharpened steel.       I am not sure what the brand is from the one I got in Chinatown but the one I got from the knife shop is a Dexter brand knife. Dexter is a pretty common brand of knives used in professional kitchens for "house knives" but it has been a great knife to use.

      @@ChefAlexOttusch I've heard good things about the Dexter blades. They're pretty common in Chinese restaurants.

      The one from chinatown was like $30 and the one from the knife shop was $50. Very reasonable for a good knife
