Keep it up Alex by the way you are on Beat Bobby Flay as of tonight. I wonder if you can impress the Food Network staff that includes Alex Guarnaschelli and Katie Lee Bigel. My guess you invited them to the Green River Grill or they sent you a letter to come to their studio
Silly lead-in good bye!
Waste of time. Flashy production near zero knife content. If you taught me something I'd like your face and voice. As it is I cant stand you. I think this is just a fail of some dude with an over abundance of pretend self esteem taking up space on youtube in my quest to find a good Chinese chef knife and how to use it. This fuy is prancing around. I cant tell you how much lothing and hate you helped me dump. My bucket was 3/4 full of disgust after a year of youtube and you made bucket overflow in one video of everything i hate about youtube and media today. Just put a balloon on your head and dance in the sand. At least that wouldn't be pretending to be educational!! Arrrrgggghh!!
Really Nice video, a pleasure
Thank you!
I think the popular one right now is "Shi Ba Zi Zuo" or just "Shibazi" particularly the P01 and F208 models I'm not fond of CN products/brands but the angle at which you cut really feels natural compared to Japanese/Western knives
Oh cool, I’ll have to look into those
Excellent questions!!!! I'm mexican and I was looking for an interview like this. You made such a great job 👍
Thank you very much, I appreciate that. I’m glad you enjoyed it and thanks for watching!
Dope shops.
Yeah there are some good in Chicago
What brands are they? CCK 1302 or 1303 have great grinds but are a little more expensive. Always look for distal taper...thicker at the handle...tapering down to the end. You'll find they perform and balance much better. Most current brands don't taper at all...they're just a slab of sharpened steel. Be careful...Chinese cleavers are very addictive! ruclips.net/video/4cB6efKDT8M/видео.html
I am not sure what the brand is from the one I got in Chinatown but the one I got from the knife shop is a Dexter brand knife. Dexter is a pretty common brand of knives used in professional kitchens for "house knives" but it has been a great knife to use.
@@ChefAlexOttusch I've heard good things about the Dexter blades. They're pretty common in Chinese restaurants.
More video like this pls How about full kitchen video
I’m currently working on that one 😉
@@ChefAlexOttusch yes chef, if u need idea for youtube let me know
Why is the audio on the L & R uneven? Also the color is kind of odd? I think simply just boosting the lows and mid tones would be good for saturation.
I am not sure what is going on the Audio, from my end everything was coming out even. I was trying to be a little different with the color and wanted a more muted color look but I am still learning about how to adjust and play with colors in my editing but thank you for the tip and I will have to give that a try on my other videos in the future.
Great vlog.. Life of a chef🫡
Thank you! I appreciate the support!
40 Degree farenhight😳
Yeah a chilly way to start the day, especially in the middle of the summer. It warms up quickly enough though
Great life Style 🥰
It can be tough at times but overall it's pretty fulfilling
Which city do you live?
Jackson Hole, Wyoming
great work man, a lot of skill.
Thank you, I appreciate the support!
the price out of factory for the china town one is about 1.3 USD, later one without polish should be 2.5 USD, but with that shining face is about 30 bucks. yes.
Yeah that makes sense
If you are still interested in using Chinese style cleavers, there’s one that is highly regarded in the commercial industry as well as domestic and most would consider it to be the standard when comparing all cleavers. The cck1303
Oh awesome, I'll have to check that out. Thanks for the tip!
How are they holding up? Have you thinned the cleavers? Which has harder steel? 😁
I use the carbon steel cleaver a lot more than the one from Chinatown and it is holdoing up really well. I Don't know what type of steel the one from Chinatown is made of but carbon steel is a pretty hard metal so Im assuming that is harder than the one from Chinatown
Dave could’ve done the T bone with his non dominant foot. He’d be very disappointed in your level of struggle.
I'm not going to make any excuses. We all aspire to be as physically superior as Dave is and are just playing for second.
good vibes edit . fits corridor style ..... but whats up with the color... is the original footage like this ?
Thanks, it was tricky finding the right storyline I wanted. No thats not the original color, I edited that too. I know thats not their normal style but I thought I'd be a little ambitious
Hahaha! I love it. Should have put googly 👀 on them.
Ill have to try that on the next horror cooking video I make lol
😂
I'm kneady is genius 😭
Thank you!
What where the prices??
The one from chinatown was like $30 and the one from the knife shop was $50. Very reasonable for a good knife
@@ChefAlexOttusch oh hell yeah that's not bad at all the knife shop one is alot cheaper than I expected
I'm sure whatever you are doing weather it be in the kitchen or a coffee shop. I know you will succeed my friend.
Thanks man, I appreciate that! Hope you're doing well!
I know you weren't to my restaurant
Hey I know you

Great video! I love this stuff!
Thanks Paul! Its so great because its so easy to make and add to dishes!!
Huge fan of adding this to basically everything! Noodle stirfry, ramen, fried rice, marinating meat. Also great for clearing sinuses ;)
YES! This recipe is so good and tastes great in so many different dishes!

When a knife is dull how long would a session be to get it sharp again.
A short answer is as long as it takes to get sharp. But it depends on your stones, the metal, and your skill level. Theres a lot of factors when it comes to how long it will take you
@@ChefAlexOttusch thanks for the reply. I'm seeing actual progress because of this vid. You think you'll do a video that goes In depth about stones, like when you want to use that grit or why?
Awesome vid! Makes me want to get my whetstone and give knife sharpening a try again.
Great video, thanks!
Hi Chef! I enjoy you videos and interviews! Hope to have you cook for my friends soon!
Thank you so much, I'm glad you like them! No problem there, you know where to find me!
I loved this interview :)
Thank you so much!! I have new episodes every week!!!
I watch more RUclips videos than I care to admit, and I have to tell you: your production quality on your videos is outstanding.
Thanks Rachel! Be sure to subscribe and share my videos!! Been doing a lot of research and tutorials to make sure I make quality content!
This is fab.
Thank you!! Download the app if you are in Chicago!
This is dope! Congrats master chef Alex!
Thank you very much!!
A sharp knife makes chopping endless vegetables a beautiful, zen, culinary therapeutic experience.... a dull one is frustrating and dangerous to fingers! Sharpening one’s own knife provides instant gratification and is cost effective! I so appreciated ‘Feeling’ the process through this video! ....thanks guys!
A sharp knife is a beautiful thing and there is something so satisfying cutting into a fruit or vegetable with zero resistance. I am glad you enjoyed this video and want to get a stone to sharpen your own knives!!
Very cool brother. Love the vlogs
Thanks, CJ!!! Hopefully, I'll be back to work soon so I'll get to show everyone some cool stuff!!
Thanks so much for showing me how to make fried rice! I made an awesome pan of it once and haven’t been able to recreate it since. I have renewed hope to try again now!!! 😀
You are so welcome! I hope it goes well the next time you make it!
Great information, Fantastic presentation!!
Glad you enjoyed it!
Hey Alex! so I’m horrible in the kitchen but I’m loving the idea of making my own pizza, for the dough does it matter the speed of the mixer? Can they be frozen? Also for the fried rice, is that recipe good for meal prep and make one big pot for the week?
Hey Nissa!! If you use a mixer you want to make sure that it is going fast enough to knead the dough, like a medium to high speed. You can definitely freeze your pizza dough. Fried rice is great for meal prep! You can make a big batch of rice and have all your veggies cut and ready and just fry them up when you are ready!! Let me know if you have any other cooking questions!!
Very nice sir!
Thank you! Cheers!
Great video thanks!
Glad you liked it!
