Awesome video, Cobus! Have you ever thought of using triggers to activate gates? Record the signal from the triggers on individual tracks for each Tom. Then, side chain the gate on the Tom track to its respective trigger. It cuts out a lot of the tedious work by allowing you to simply said the attack hold and release settings of the gate!
I know this is not "cheating" in your mixing process but somehow I always felt so wrong about doing this for some reason...But now that I see that one of my childhood icons does this as well I'm super confident to keep on manual gating my toms haha! Great video btw!
This technique is golden standard for getting good clean sound without using samples. Another interesting idea is to have triggers on drums side by side with microphone and then use trigger track not for samples, but only for triggering gate on tom microphone track. That way you can get similarly precise results - you can set predelay on gate or just push back trigger track to preserve transients. It's a bit more setup but it automates manual cutting.
Good stuff! I also prefer manual gating over automated. Transients are sacred, I don't trust gates to give me the full punch. Maybe there are some good lookahead gates, but didn't try that out yet
I'm not the only one that does 'manual gating'! I always thought it was sort of considered cheating instead of using an actual gate but like you said, it is ridiculously tedious trying to balance it so it doesn't open everytime I do a loud snare roll or it a crash etc.

I have used physical triggers tapped on the side of the tom’s that feed the gate triggers. It is rock solid.
