5:03 that's sugar not salt, it's called "炒糖色" (fried sugar color) in Chinese, it's basically a caramelization reaction. often used in braised dishes.
It's for the color and gloss of the dishes, also gives the food a unique flavor and aroma. It can be carried out using oil or water. Oil conducts heat quickly but is easy to burnt, while water conducts heat slowly but is stable.

Chinese food is not suitable for Michelin standards. If we Chinese people still refer to Michelin when eating Chinese food, we will be laughed at. By the way, the food in most Michelin recommended restaurants is not the best or even not very delicious.

you probably don't remember me because you have soooo many subscribers...but several years ago just before the pandimic I had sent you a couple messages
. My name is David Ward and I live about 10 miles north of Nashville Tn. in the USA. I had told you that I had been living in a barn on the back of my parents property for years, well me being the only single child they have....I've finally been able to move into their house and I've been holding down a full time job, for the last 24 years, and I take care of and help them with everyday things. Mark, you've always been an inspiration to me and I still look forward to eating with you and your family at the great buffet in the kingdom to come. I continue to pray for you and your family and I'm so happy that you are still traveling and eating food all over the world. God bless you and your family.

Yes. China has Eight Major Regional Culinary Styles: Yue (Cantonese) from the Guangdong province, Shu (Chuan) from the Sichuan province, Xiang from Hunan province, Hui from Anhui province, Lu from Shandong province (home of Confucius), Min from Fujian province, Zhe from Zhejiang province, and Su from Jiangsu province. Cantonese cuisine is the most famous both domestically and abroad in major Chinese diasporas worldwide with the famous quote “Eat in Guangzhou”. Cantonese cuisine is characterized by original flavors and freshness. Sichuan style is characterized by mala, or numb (ma) and spicy (la). Hunan style is characterized by spiciness. Zhejiang and Jiangsu styles are characterized by a tinge of sweetness in the salty dishes. ❤❤❤ Greetings from Los Angeles from a Cantonese Chinese American. Really enjoying your trip to China. I hope you can also visit some ancient towns like Furong, Lijiang, Fenghuang (Phoenix), Zhouzhuang, Wuzhen, and the Four Great Ancient Chinese Capitals Xi’an, Luoyang, Nanjing and Beijing.

I appreciate the skillset, techniques, natural ingredients, & expertise of these cuisines infused with such excellence, quality, embedded flavors, and pride in preparing these delicious unique comfort dishes. When I saw the custom fitted stovetop woks I knew right away this preparation was going to be a special treat. The Aunties have decades of experience crafting these recipes passed down from generations of cultural culinary treasures. Mark去吃陕西农家菜了。他的本地导游Michael对掌勺的女大厨说“他在国外有一千万粉丝,你出名了”,LOL。Not sure what the next food trip Mark plans to go in China. But from what I can see, this village is already very close to Hanzhong another famous city in Shanxi Province. The first emperor of Han Dynasty - Liubang originated from the place about two thousand years ago. It has some local special food as well. I visited there once and loved it. It will worth the visit.

In China, they are called "农家乐", which means country restaurants or hotels (mostly providing accommodation services), which provide services to people coming from the city. Although they are not professional chefs, but you can taste local specialties here. You can also hang out nearby and experience the natural scenery. Basically, this is a place for people in the city to relax and have fun. You don’t have to drive too far. You only need to go out of the city to the countryside. It is a very short trip and is suitable for tourists. Spend the weekend.
