Priscilla, your cooking always looks so delicious. I make a similar potato casserole and add sauteed onions, Worcestershire, marjoram and turmeric. I combine everything and bake and then freeze some.

When you held up that Amish cookbook, I was gifted one at my bridal shower because as a Mennonite girl, getting married to an ex-Amish boy many years ago (39 years ago), the girls that I worked with thought it might come in handy!!! Well let's just say that when he said he wanted "rival soup" and "apple goodie", I dug it out to see how to make them!!! I love that cookbook.
