Soon after grinding Required batter u keep for fermentation and balance u store in fridge. Like divide into 2 after grinding. One portion keep 8hrs fermentation. Another portion as soon u grind u store in fridge. So after 2 or 3 days take the 2nd batter and keep fermentation for 6hrs. Then prepare idling. Fresh batter takes 8hrs to fermentation, but stored batter takes only 6 hrs to fermentation. Coz 10% of fermentation ll be done in fridge itself when it was stored. I hope u understand. Thank you
Mixer is good for only does batter. For Idli batter,need grinder to grind the urid Dhall and make it to bounce double amount of batter like a ball. Unfortunately mixer won't increase the upari.

May I answer… I stopped using wet grinder bcs of age have gone back to using mixie. I use one is two method…with using split urad. Two idly rice two split urad dal. A little methi seeds no sago. My idlies have never let me down 2:1. In fact I used to live in Kenya quite cold and have used Basmati rice by soaking it in slightly hot water and my idlies were like sponges!

Two rice is to one split urad dal (for mixie) minimum 5 hrs for Rice and one hour for dal!
