*Ingredients* For the base: 350g digestive biscuits 170g salted butter, melted 34 KitKat fingers For the filling: 450ml double cream, cold 500g full-fat cream cheese, room temperature 120g icing sugar 1-2tsp vanilla extract For the topping: 100g dark chocolate 100g double cream 12 KitKat fingers, chopped 1) Line an 8" springform cake tin with baking paper. 2) Finely crush the biscuits using a food processor, or put them in a bag and crush them with a rolling pin. 3) Pour the crushed biscuits into a bowl and mix them with the melted butter until it resembles a wet sand. 4) Line the edge of the tin with the KitKat fingers. 5) Put the tin in the fridge whilst you make the filling. 6) Scoop the mix into your baking tin and press it down firmly to make your base. 7) Pour the double cream into a bowl and whisk to form stiff peaks. 8) In another large bowl, whisk together the cream cheese, icing sugar and vanilla until it has no lumps. 9) Add the (now whipped) cream to the cream cheese mix and fold it in with a spatula. 10) Take the tin out of the fridge and scoop the filling onto your middle of your base, pressing it down to the edges as level as possible. 11) For the topping, microwave the chocolate and double cream on 500W for 1 minute . 12) Let it cool for 1 minute, then stir until it's melted and smooth. 13) Pour the ganache over the cheesecake and smooth it out. 14) Sprinkle the chopped KitKats on top. 15) Refrigerate for 6 hours minimum. 16) Slice it with a warm knife. 17) Enjoy!
