Danielle Graham Makes Authentic Italian Snack, The Suppli!

SURPRISE! Today’s recipe is called Supplì, which was derived from the French word for *surprise*, because of the filling inside.
This traditional Italian rice ball is stuffed with oozing mozzarella cheese. It was originally sold at a 'friggitorie', typical Roman fried food shops. Now they are commonly served in most pizzerias all around Italy.

It looks good but it is not really authentic Italian Suppli. It should be made with Parmigiano-Reggiano in the tomato sauce and the "Fiordilatte" mozzarella should be dried before you put it in the suppli. Finally, make a batter instead of the egg wash. It will make a huge difference.
