Suppli': Italian Fried Rice Balls

  • Suppli' Al Telefono (deep fried rice balls "on the telephone" - the translation) is a roman staple. Why the telephone? When you brake the Suppli' in half, it'll create a string of mozzarella cheese between the two halves, making it look like an old telephone. Yeah...not a smartphone kids, just grandma's old machine that's now been sitting in her living room for a while now.
    It's the core of roman street food and when in Rome, you can take it in any pizzeria, pizza a taglio (pizza by the cut), alimentari (small groceries) and even in food courts in malls.
    Very easy to make, and very easy to get creative and stuff this amazing rice balls with anything you like.

    For 10 Rice Balls
    200 gr RICE
    800 gr SAN MARZANO TOMATOES
    1 ONION
    1 CELERY STALK
    1 GARLIC CLOVE
    1 CARROT
    1 Bunch of PARSLEY
    10 gr BUTTER (2 knobs)
    2-3 LEAVES of BASIL
    SOME LOW MOISTURE MOZZARELLA
    150 gr ALL-PURPOSE FLOUR
    200 ml WATER
    170 gr PANKO BREADCRUMB
    1 lt CANOLA OIL To fry

    Is this a variation of the Sicilian arancini? Is so what is it’s origin? My mom made arancini every Christmas and she always shaped as a cone to symbolize a Christmas tree. Arancini is usually round the rest of the year.
