First! Making pupusas is harder than it looks...its an ART to get that masa and chicharron the perfect consistency and flavor. The curtido needs a couple days of prep too lol! Every Salvadoreno has their own method of prep. My wife couldn't make it half through the video because that's not how she does it exactly. I'm not gonna dare show my mother, grandmother and aunts because they would be screaming at the screen with criticism LOL. Overall, great job showing us how you guys prep them at the stadium! Can't wait to be back at Audi Field with some pupusas in hand cheering on United! VAMOS UNITED!

Yes it is very tough! Our curtido for the games we prep 2 weeks in advanced to make sure its pickled y bien delicious, our chicharron is a secret and this is a more simplified way! I am sorry your wife couldn't make them at home, you are right when making over 3,000 pupusas we use different methods therefore simplifying it for the video was a challenge for me. I hope you come visit me and our pupuseras at either stand 137, 117 and 409. I am not usually one to go to sporting events, but almost 20 years ago I won some tickets to go see DC Untied play at their home stadium. My husband used to coach soccer, so we had some idea what was going on in the game. But honestly, the best part for me was the food and the amazing drum band put together by the fans. Great music, great food, people at a party - a cherished memory during these days of isolation for sure! Thank you.
Great video! Best of many I have watched! Did you see how thin she got the masa before adding the filling? That was trade secret stuff. That is why you need some lube on the hands- damn fantastic! Perfect curtido as well! I hope this woman is doing great things in the food world- she is a natural!
I followed the instructions of 2 cups masa flour to 5 cups water, and all i ended up with was a soupy mess that was completely unusable. I had to add several cuos more masa to even approach the appropriate consistency to use. What went wrong?
You have to add the water slowly. Like really slowly, maybe half a cup at a time for the first two cups then a quarter cup as you go. Mix before adding more water. The dough expands as you let it sit. My mom always had us add the water slowly, mix it and once it was done, to have it sit for a few minutes to make sure the consistency was right.
@Nanook128 that doesn't matter (ive used diffetent types as well depending on what was available in the stores near me.) It really does depend on how quickly you add the water. Just add a little at a time, mix by hand, then add more if needed. Hope this helps! ^_^

Yes! you can either make the masa, stuff the masa flour, round them out, place in a air tight container in with a damp cloth on top to keep the masa from drying and then the next day you can flatten them out, use a little water or or oil to loosen the masa. You lost it with the masa. Pan has not need to be oiled, as the oils from the cheese and chicharron come out so that they do not stick. Curtido and salsa is added by the customer, not the cook.
