Thanks for the video! I have two questions. I would like to use this recipe and make it a cake batter ice cream. But, I’m not sure when to put it in or how much. And do. Need to bake the raw cake mix or will it be ok to just use it? Thank you!

Hey Bettie thanks for making this video about ice cream! My question is what is the difference between the ice cream rock salt and the regular pinch of salt? And what is the purpose for salt in the ice cream? Thx!

Hi Cecily! That is a great question! Ice cream rock salt does not actually go into the ice cream, rather it is used for hand cranked ice cream machines. The rock salt is combined with ice and this solution is put around the container where the ice cream base is. Ice freezes at 32 F, but because of the fat and sugar present in ice cream it freezes at a lower temperature than ice. When salt is mixed with ice it lowers the freezing temperature so this is used to help freeze the ice cream. The pinch of salt that actually goes into the ice cream helps round out the flavors. Any baked good that is made without salt will taste flat and one note. Salt always balances sweetness. I hope that helps!

Do you put the plastic on the mixture right after you strain it, while it’s still hot? And take it to the fridge right away ?
