      You don't want the seeds of a vanilla bean pod ... used extract because than you won't have little black beans in your icing ... if your going for a rich white icing.

    This is the BEST frosting I've ever made!!!! THANKS. I did add a extra cup powdered sugar and a little more milk and vanilla because I was frosting cookings. Amazing.

      Mine tastes all buttery and not nice. Any reason? I live in a humid country with a temp of 35c. Does the temperature matter?

      @@123tharindra yes its about the butter being at room temperature and if it is all melted u should not use it u will have to put the butter in the freezer for 10 mins

    This is the BEST recipe ever!!! I had tried making buttercream many times but they never turned out good! I am from Brazil and we don't eat a lot of buttercream here! But everybody at home loved the one I made with your recipe!!! Thank you for teaching us how to make the best buttercream! 🙏💜

      I ended up having some frosting left over, so now I use it on waffles for dessert. Not the healthiest option, but it tastes good 😆

    Made this at home today for my husbands birthday cake! Turned out so good. Used just a half cup more of powdered sugar and pinch more of vanilla. Did not incorpora salt. Makes a lot of frosting!

    I just made this yesterday and it turned out great! I coloured mine gold with Americolor Gold gel food colouring and I used LorAnn Oils Bubblegum flavour to use for cupcakes I'm baking for my church. Thank you so much Gemma, this recipe has saved my life!

    Oh my Jem I have tried and tried to make a descent icing in years but it just never was that great... edible, but not amazing but followed your easy steps tooo!! the note !!! and wow.. I make great, no amazing cup cakes moist and light and really tasty and friends all ways ask what’s my secret.... but never ask for the icing recipe, but at my birthday party yesterday but actually the 15th of April any way I made some cupcake treats and with your recipe and now never before their all wanting the whole recipe and the secret to light fluffy creamy icing I can’t thank you enough your an absolute God send hug hug hug

    FORGET ALL OTHER AMERICAN BUTTERCREAM RECIPES AND TRY THIS ONE!!! amaaaazing. I usually hate the taste of american buttercream because it is extra sweet, but not with Gemma's method. I followed her instructions exactly and wooowww ... best frosting ever.. thank you Gemma

    I just wondering how long the buttercream icing for cake can stay in the room temperature or outdoor ? Will it melt easily? Will the cake frosting melt if the cake stay outdoor?

      It is still dairy, so it will melt. It is the nature of the product itself. It will depend on how warm it is where you are on how fast it would melt.

    Hi Gemma! This recipe has become my favorite recipe for buttercream frosting. It is absolutely delicious! Do you have any recommendations for how to store the frosting? Whenever I try to store it in the refrigerator, it goes rock hard. And when I leave it out at room temperature after chilling, it basically liquifies. Thank you and keep up the great work!

    I love to cook, my mom doesn't know I'm makes a double layer cake let alone a chocolate cake. I tried cooking before but I get very impatient and leave it, and it constantly burns in the oven. I'm going to try this recipe and I'll tell you how it goes. :)

      I have 2 timers working during the cake making process (all cooking actually). Baking: One for oven timed cake cooking. Adding a few minutes more is ez and the buzzer reminds you. You just have to listen to it, LOL The other timer for cooling/refrigerating the frosting between steps. I was just like you until I started listening to my timers. Good luck!

    Ok this will sound weird.... but I wanna make healthy breakfast cupcakes for a baby shower.
    I am struggling with the frosting coz I want it as healthy as possible using rice, but it has to be very fluffy and airy. So maybe...
    - German Buttercream using rice custard.
    - Rice pudding mixed into whipped coconut butter.
    if it all fails I'll make cashew buttercream frosting or coconut yogurt frosting.
    but kind of like this:
    Cake - Rolled oats, banana, salt, honey, water, butter, vanilla extract, dried fruit.
    Buttercream - Rice custard buttercream frosting.
    Toppings - cinnamon dust and pieces of sorted nuts.

    I made this today and it was yummy! I only used 2 sticks of butter instead of 2 1/2 because I was worried it would be too buttery.. And I'm glad I did. I think 2 1/2 sticks would leave you with a pretty buttery frosting. I didn't have the patients to scoop it in a spoonful at a time, so I did half of the sugar, beat it for a minute and then did the last half. I used about a tablespoon of milk, it really depends on how soft your butter is and the climate.

    Oh I’m so confused now... Everyone has always told me not to use the whip tool to beat the buttercream cause if it gets too much air then you can’t smooth it. What’s your take on that? Please help!!! 🤷🏽‍♀️🤷🏽‍♀️🤷🏽‍♀️

      Hi Carol, using the whisk attachment has worked well for me. Smoothing, or the spreadability of the buttercream out depends more on the temperature of the frosting itself than the air in it.     whenever i make buttrcream, it always have a griddy texture, even though i already shift the powdered sugar, how do i fix this?

      I have had other Bold Bakers experience this. I cannot understand this. If the powdered sugar/icing sugar is as it should be, then the beating in the butter will start the dissolving of it as it incorporates, and a little milk/cream will finish it off.
      I am wondering if it is about expectations! It should not take that amount of time to whip this up, really 20 minutes should do a big batch easily. Having refrigerated this you will need to take it back to room temperature and whisk it again, I would use the beaters.
      I am really sorry, I cannot think why this would happen, I am at a loss.

      Try a different brand of powdered sugar.

      What is the altitude you live at? In Montana here we are at 4,700 feet above sea level, and just about every recipe has to be modified because the sugar, butter, and salt react differently and therefore either get increased, reduced, or replaced with a substitute that has different reaction rates. Also check for moisture in your powdered sugar, that will Always cause a grainy gritty texture. Some people bring it home from the store, open the sealed bag and store it in their fancy glass containers with the worthless metal clamp and rubber seal, you'll notice the brown sugar is the first to Clump, that's your sign of excess moisture.

      Mine too. I tried making one earlier and it is way too gritty, I followed the ingredients exactly. I sifted the powdered sugar twice just to be sure. ☹️

    Hello. Thank you for the recipe. I do have a problem with making buttercream - it always is grainy from the icing sugar. I have tried different quantities, different brands of unsalted butter and different brands of icing sugar (even blended it myself once). I sifted the sugar many times. I have a standing mixer similar to the one on the video and have mixed a lot with it. I tried mixing it for 5, 10, 15, 20, 25 minutes. And I do not get different results - Everytime my buttercream is grainy. The only conclusion I got to is that so much sugar cannot be dissolved in so few butter. I have not tasted actual buttercream from a bakery and not know whether the grainy texture is the expected result. Can someone guide me on this matter - is grainy the wanted texture and if not, could you help me resolve my issue. FYI I live in Bulgaria and some of the brands that you suggest might not be sold on our market. Thank everyone for the help in advance!

      Hi Deana, this is a big question for this forum, I prefer to take these on the website as I can follow the thread more easily. (www.biggerbolderbaking.com). If you go to the recipe there you will get some inspiration, and the recipe too. (www.biggerbolderbaking.com/best-ever-vanilla-buttercream-frosting/). Provided you are using powdered/icing/confectioners sugar it is almost impossible to get this wrong. the sugar really dissolves in the butter, and the addition of the milk/cream further creams this recipe. softening the butter before adding the sugar will help too, I have never had this fail!       Was it the butter? A younger me, once made it using "vegetable spread/ margerine." It would not fluff nor mix well. Butter comes from cows... I didn't know that! :( lol

    I made it..when I taste it I felt by the sugar in the buttercream...why that?...how I make all the sugar dissolve in butter?

      You need to use powdered sugar, and beat it really well. Then adding the milk or cream further dissolves the sugar. Check out all of the recipes here (www.biggerbolderbaking.com) :)

      Yahia Abd El Moneim powdered sugar= icing sugar so you need to get icing sugar

    Amazing recipe , not too sweet ! It was my first time making a buttercream frosting and it was super easy . I started with 3 cups of sugar because I didn't want it to be too sweet but ended up putting the extra 1/4 cup like the recipe said .

    isn't it too sweet? I tryed making the cream using a hand mixer, I used 200 g of butter, 600 g of sugar and some spoons of milk, but it was awful, nobody could eat the cream, only because it was toooooooooooooooooooo sweet

      Софья Румянцева I think that this type of frosting is too sweet as well :/ I love her videos but I would never make this buttercream because it's just to sugary and sweet.

      Christy Kirby that will just completely change the flavour adding lemon which isnt everyones taste! You have to make the sponge not so sweet if you plan on using frosting, as frosting is so sweet in general.

    Mom passed away today. She had a recipe for homemade vanilla buttercream frosting that was amazing. I never learned it from her. Now I've got to try my hardest to recreate it. This is my starting point.

      I do not recommend vanilla essence, as it doesn't give that nice mild aroma of natural vanilla. I would go for vanilla extract.

    this is soo amazing, and it hasn't much sugar. other recipes use sometimes even 8 times more sugar than butter. but this is amazing. stiff but not firm. and it has no shortening, I mean, why call it buttercream if it has no butter. and it doesn't even taste like butter. it tastes like a vanilla cloud. amazing

      It will help keep your frosting smooth and make sure that all the sugar is well mixed. Putting it in all at once can cause there to be lumps of sugar left behind or even a syrupy buttercream, adding it slowly however keeps the fluffy texture.

    Thanks for the tip! I tried to make buttercream a few months ago but it was a disaster. I used the beater attachment instead of the whisk, and didn't whip it anywhere near long enough. It was gritty and flat. I'll have to try again!
