In the Yassa (Code of Laws orally spoke by Chinghis and then Preserved by script by Kublai Khaan. The first and Most important law: 1. It is ordered to believe that there is only one God, creator of heaven and earth, who alone gives life and death, riches and poverty as pleases Him - and who has over everything an absolute power. The Khwarazeim and Abbassids were not conquered for being Muslim, but were conquered for their incredible arrogance and greed. Don't think they were just and honourable, because they called themselves Muslims. Remember the story of Hulaqu Khaan, who fed a plate of gold to the Caliph of Baghdad and when the Caliph refused, Hulaqu told him "Why didn't you use this gold for your people and your soldiers?" implying that he kept all the gold, like a dragon in a cave and didn't use it for any good.
I agree, a lot of people tend to forget what many of the muslim rulers did at that time. This still does not exclude the fact when the mongols converted to islam there were was much propaganda relating to thier original religion in order to make them seem more favorible to thier subjects. much of what we know of Yassa comes from later accounts, and there are no surviving direct transcriptions of the Yassa from the time of Chinggis Khaan.

What is interesting, Turkic people who embraced Islam were able to save their identity to some extend more than those remained pagan. Glad Islam was introduced to us.
The Delhi Sultanate also contributed to fighting the Mongol Empire to a great extent! Even the remnants of the Khwarezmian Empire fought against them in a couple of battles. You should have mentioned these.

His biggest enemies were Mongols and the Ming Empire (most powerful empire at the time).

Turk in my opinion is the common name for people of different, races, languages, cultures. Who have common spiritual and historical identity. Those tribes who were united under the banner of Bumyn Khagan called themselves celestial Turks and never forgot about that even after they were united again by Genghis Khagan.
