    Try this recipe:
    Peel, then thinly slice your pumpkin into strips and place in big bowl. Sprinkle salt & pepper/paprika. Lightly Drizzle extra virgin olive oil over the pumpkin strips and mix everything well
    (Extra virgin olive oil is amazing for its nutrition, its not like seed oils which is what you want to avoid)
    Spread your strips in baking pan and bake for ~30 mins (or until soft and slightly crisp)
    Serve!
    It tastes fantastic on its own and is also a perfect side for any of your main meals

    Thank you for the tip about using salt when washing the vegetables (I didn't know how to ensure that the veggies from my garden are clean and germ free). I find home gardening to be therapeutic, and I also love fresh and organic food... but I'm an amateur gardener, so i learn as i go along.❤

    The garden is so lush and green. Yes, potted plants needs extra watering during the hot days. Right now most of our plants and grass are dormant until Spring they start shooting through the earth, it’s like new birth. Still too cold right now to plant new crops, just doing pruning and readying the soil for planting. Love ❤️ your dress and hat. One Love ❤️❤️❤️🇯🇲🇬🇧🇺🇸

    Greetings Jael. Great video. Suggestions for pumpkin: 1. Youu can collect the seeds and dry them then roast them like you would roast groundnuts. Makes for a good snack.
    2. Another way to steam pumpkin while retaining nutrients not lost in water and adding flavor is to line the bottom of the saucepan with pieces of the banana stem (use the stem from the cooking bananas) and some water just to cover the stems. Then add a banana leaf or two to keep the water from getting to the pumpkin. Then put the pumpkin slices on the banana leaf or leaves (depending on how many you use and cover them with more banana leaves (you can harvest these banana leaves from your garden as I see that you have banana plants). Then cover with a lid or another pot and steam, ensuring that the water in the bottom of the saucepan does not dry out and the stems burn at the bottom of the saucepan because that will give the pumpkin a burnt-food flavor, thereby defeating the purpose. The steamed banana leaves will give the steamed pumpkin a great aroma/flavor and the pumpkin will not be so mushy from boiling in water--it will cook in steam with its own moisture. YOu can also steam mingled ugali this way to give it the steamend banana-leaf flavor, just as a variation from the way you usually cook it. Just make it ahead of time and then steam it for an hour or two in banana leaves on low heat for the flavor.

    I love eating pumpkins too and my favourite are those has dark green colour, you can try making pumpkin mukimo with soft maize it’s tastes good too or pumpkin cake but I have never tried it just read from some magazines recipes, nice video as usual my beautiful Jael, be blessed ❤😊

    Your garden is so productive. I am looking forward to spring to start my veggie garden again and watch my perennial flowers come to life once again. Right now we are covered in snow where I live. Pumpkin is one of my favorite vegetables I plant about 4 to 5 varieties each gardening season . Then I harvest them and store them in my root cellar for the winter months. They usually last for about 6 months in there. I lay them down in boxes with straw. I enjoy watching your videos. Blessings

    Hi Jael, love your vlogs😍first time commenting. I’m a Sierra Leonean living in the UK. In Sierra Leone we eat the pumpkin everything! The leaves we cook as pumpkin leaves stewed with lots of onions, tomatoes, peppers and herbs, the seeds we blend and cook egusi stew or soup which is a west African palm oil soup eaten with fufu or rice, and the flowers of the pumpkin we dip in flour, egg and salt batter and fry for a light snack. Well the pumpkin we fry, we boil we steam and we stewed. Nothing goes to waste 😂 lots of love ❤️

    Hi Jael. You can also remove All the seeds wish and cotton dry. (Please don't wash the seeds you want to plant next year) place in air tight container to preserve. Use little bits daily in porridge or sprinkle in soup or sources 😊❤. (Crush or grind) Very healthy. When l see you l will bring you more African varieties seeds.The orange Coated ones are European or North American. Very watery but okay for soups. OMG Jael, definitely Murder on the dance floor. The roosters 😮😮😮😢. 😅.

    Make a pumpkin carrots soup. Boil and blend all the ingredients - celery, onion, garlic and ginger. It’s a creamy soup. Pumpkin pie, pumpkin bread, pumpkin seasoned rice.

    BTW do you eat pumpkin leaves in Kenya? If so, how do you cook them? Do you cook them with ground nuts? That is one of my favourite dishes; we cook that in Zambia and I am curious if other places know it.

      Yes,we do cook the leaves. We mix with okra or another slimmy vegetable I forgot the English name. We don't add groundnuts but I wanna try it.

    Wow, bumper harvest. I planted pumpkins in my small garden. They fruited so well, unfortunately majority of them were attacked by some insects while still very tender, I only harvested 3. What do you use to avoid this.
    I am not sure about the type of orange pumpkin but where i grew up( nyandarua county) we used to have pumpkins that changed colour from green to some other colour that looked whitish or greyish when ready for harvesting but what we grow here in Kiambu is only the green ones like you have which i had never seen.

    The vitamin D partnis correct. We, my family living in the Skandinavien take supplement for almost 7 months a year. The winters up hete are long n dark and when the summer comes, pur God given sunscreen "misbehaves" too by protecting us from the UVR.😅😅
