  • Our friend Morgan McGlone has cooked a lot of chicken-or "chook," as they call it in Australia, where he's from. He's a hell of a chef and restaurateur, as well as an excellent father to his son, Ryo. In this episode, he talks us through his roast chicken method, which, spoiler alert, involves a lot of butter. This is a bit of a long cook, so it's more of a weekend dish, but nothing beats breaking into a whole chicken with your family. The kids get to see food in its whole form, and pick the pices they want. The only decision you have to make is whether to share the best bits, or save them for yourself.

    Roasting a whole chicken is an adult rite of passage for sure! As is leaving the giblet pack in the 1st time. 🙄
