Quick, saucy CHICKEN PICCATA is undefeated with our kids | Winning Mealtime

So far, my kids have always happily eaten this chicken piccata. It's crispy, sweet, sour, and super savory thanks to those little capers (which are easy to pluck out if the kids don't want them). But the real win is that my wife is obsessed with this dish, too. Usually, I can have this on the table in under 25 minutes, start to finish, which is a huge win. Also, while I almost always prefer chicken thighs, this is one of the rare instances where white meat is just fine. - Chris

Only tool needed to pound chicken is ball of the thumb, wrap your chicken with plastic or parchment first, then gently/firmly make chicken same thickness/thinness. Not Hulk smash, mind you; Chris said "feather it out."
