Blackberry Jam and Apple Butter in the Instant Pot

- Blackberry Jam:
8 Cups fresh or frozen blackberries
2 tbs lemon juice
7 cups sugar
1 packet Sure Jell Original (Not the lower sugar in the pint box)
To a heavy bottom pot place blackberries in and turn heat on medium high. Using a potato masher, mash the berries and let them come to a boil. Add sugar and lemon juice and mix well to combine. Bring the berry mixture to a boil and allow the sugar to dissolve. 2 to 3 minutes. Add the sure jell, mix to combine and bring to a boil for 1 minute.
Fill clean and warmed jars. Debubble and wipe rims adding lids and rings. Water bath pints or less 10 minutes.
Apple Butter in the instant pot:
5.5 lbs of apples (approx. 15 apples)
1 cup light brown sugar (Like I said in the recipe, if the apples are sweet I would cut this down to 1/2 cup)
4 tsp cinnamon
1/2 - 1 tsp ground cloves
1/2 tsp salt
2 tsp vanilla extract
1 tbs lemon juice
Peel and core apples and dice. Add apples and the remaining ingredients except for vanilla to your instant pot. Stir to combine. Pressure cook for 15 minutes and naturally release for 20 minutes. Use an immersion blender to make a smooth consistency. Put instant pot on saute and continuously stir until it thickens to your liking. It will bubble and pop. I turned the saute off once and let it settle down and started it back. Keep stirring! Water bath for 10 mins for pints and less. Enjoy!
