Delicious! I only use Bueno chile and i make a batch twice a week because that's my dad's favorite and it's easy to enchiladas or just a bowl w sopapillas or on eggs. And that's my request when i ask him what he feels like eating. He is 90 and when people ask him what is secret is he always says it the red chile.
Mama used pigs feet for her pozole but also used pork ribs to make the stock.The problem we have here is they don't sell nixtamal.At one time we had the Masa lady but she got so old and didn't have anyone to take her place.The canned stuff is OK but nothing can really replace the homemade nixtamal which I think is the secret to a good pozole!
i got some nixtamal at the farmers market last fall in vegas, going to cook it now :) been a while, i don't remember how long to soak but probably overnight...
The chile pods are used to infuse flavor to the posole throughout the cooking process. You may spoon them out before serving. You won’t want to eat them. It is indeed posole time! Enjoy!
Yes, I wondered the same thing. Most of the time the pods are removed. Everyone does it different. The recipe looks awesome. I can't wait to try the red chili. I bought some because of your video. I will use it to make a dish in the near future. Good job!
