  • Ingredients:
    6 red mullet fillets
    2 ripe tomatoes
    1/3 onion
    1 clove of garlic
    6 olives, halved
    a few capers
    1/2 zucchini
    1/3 chili pepper
    dill
    some basil leaves
    olive oil
    salt
    pepper
    zest of one lime
    juice of one lime
    2 parchment paper sheets
    Method:
    1. Chop the tomatoes, zucchini, and other vegetables finely.
    2. Place two parchment paper sheets, drizzle with oil, then layer tomatoes, zucchini, onion, garlic, capers, chili, dill, basil, lime zest, salt, pepper, and a little oil. Place the red mullet fillets on top, drizzle with oil, salt, and pepper.
    3. Fold the parchment paper well, oiling the edges to seal, and bake at 180 degrees Celsius for 6 to 8 minutes, depending on the thickness of the fish.
    4. Open the parchment paper and, as Greeks, we love a bit of fresh oil on top and then the lime juice.
