This is Injeolmi Cake.
What is Injeolmi?
Injeolmi pronounced [in.dzʌl.mi] is a Korean rice cake, (see Image - url.kr/lbuf7W) made by steaming and pounding glutinous rice flour, which is shaped into small pieces and usually covered with dried soybean powder or other ingredients. (from Wikipedia)
There are so many people who like Injeolmi Cake in Korea, but there are few kinds of Injeolmi Cake.
I was surprised that there were not many Ingeolmi cake. In fact, when there were many requests for the Injeolmi cake, I was worried because it was a part that I didn't try. But now I am grateful to them. Another delicious cake has been made. I made a cake that really resembles Injeolmi but still looks like a Western-style cake.
This cake consists of soybean powder mousse, Red bean paste, Soybean powder crumbles, and the bisquit. And dressed with chewy and soft Injeolmi. After making it, frozen in the freezer. It can be served after 10 minutes at room temperature. It tastes good if you eat it like ice cream.
But I'm a little worried. I put my soul in this recipe.
The recipe is complicated even though the cake's simple-looking. So the video is also long~.

In fact, it's easy to buy them in Korea. But I made how to video especially for foreign people who have difficulty in obtaining Ingredients. Please watch until the end. 😉
Ingredients (15x15x7cm square mousse ring is used, cake height is about 6cm)
♥︎ Soybean powder crumble
18g cake flour
18g roasted soybean powder
18g almond flour
25g sugar
25g cold butter in 1 cm cubes
Two pinches of salt
♥︎ Bisquit
10g cake flour
10g icing sugar
20g almond flour
1 egg white
20g sugar
1 egg yolk
8g vegetable oil
2g vanilla extract
♥︎ Red bean paste layer
80g water
3g agar powder
240g Red bean paste
25g sugar
♥︎ Soybean flour mousse
1 egg yolk
15g water
40g sugar
6g gelatin powder + 30g milk (or water)
100g mascarpone
12~14g soybean flour
250g fresh cream + 15g sugar
♥︎ Glutinous rice dough
160g glutinous rice flour
80g sugar
1g salt
200g hot water
When I lived in Korea, I would often buy injeolmi while walking home from work. Roasted soybean powder is one of my favorite flavors. This cake looks wonderful.

This is why I watch RUclips. Not only learning about food from all over the world but getting recipes and visual instructions! I have enjoyed eating roasted soybeans as a snack for years but, as an American, have never been introduced to Injeolmi Cake. (And I do eat and make Korean food at home. I’ve decided that in 2022 I will cook a new savory meal each week and bake something new each month. This is definitely going on my baking list! I appreciate the instructions at the end for the roasted soybean powder and red bean paste. Even if I can find both here, I assume the homemade versions are best. I have no idea when I’ll get to this one (it’s still January) but I’ll post the results in comments. If you have Instagram I can tag you. Thanks again so much for all your recipes!

Made this cake and it was delicious! Soybean taste and smell amazing! Just got some lumps in the mousse probably bcuz the gelatin cool down before I added in the cream. Definitely will try to do it again. Thank you for your recipe!!

벼르고 벼르다 2년만에 만들어봤어요. 막상 해보니 생각만큼 복잡하진 않네요. 설탕이 자잘하게 계속 들어가서 달까봐 걱정했는데 생각보다 달지 않고 고소하고 깊은맛이 나요. 모양도 차분하니 예쁘고 어른들도 좋아하실거 같아요.
