- I have been tagged in this TikTok SOOO many times for this vegan potato cheese and it looks fantastic in the video but i'm scared that it might be too good to be true. I guess we will just have to find out! I love it when you guys tag me in these viral wild videos, so please never stop!

There is a thing in Austria and Bavaria that is called Kartoffelkäs which literally translates to Potato Cheese. It’s made of potato, mayonnaise, chives, red onions, pepper, salt and sour cream. It‘s a spread, but I Made ist vegan on several occasions and it’s a Perfect Beer Garden dish… try it🎉

I was about to say the same thing (I’m austrian and love it) but you don’t get hung up on making it look like cheese, it’s a potato based dip with pickled add ins like capers, onions and gherkins….it’s really good and not gloopy!

Yes to a vegan cheese series! I'm not vegan but my brother is allergic to most animal products and a vegan is marrying into the family. Food is my love language and my way of making people feel welcome and included, so the more recipes the better!

You could add refined coconut oil and use tapioca as a starch rather than potato starch. REFINED coconut oil doesn’t have a taste and would firm up the final texture after set, be less rubbery. The tapioca would add stretch. Loved your Frankenfurter 😆
I recently started eating a vegan diet and have been obsessed with your videos.
I found a delicious queso recipe I'd thought I'd share, 2 cups rolled oats, 1/2 nutritional yeast, 1/4 cup cornstarch, 2 teaspoons onion powder, 12oz roasted peppers in jar (with oil), 1 tbsp lemon juice, 1/4 teaspoon liquid smoke, 4 cups warm water, blend for 5 minutes and chill. Closest thing to Tostito queso that's vegan. 10/10 would recommend trying it out!!

I tried this recipe 2 years ago after finding it on a video with it being touted as a life changing recipe. I followed the recipe exactly, even buying new liquid smoke exactly like in the video and new nutritional yeast because I'd had mine for a bit. The end result was beautiful. Texture was great but it didn't taste at all like cheese sauce. It was disappointing. I suggest making a half recipe to try because it made a rather large amount and despite my trying different additions to make it more tasty I would up tossing it. A lot of people had commented about how great it was but it didn't work for me or my mom as dip, to use in Mac and cheese or with brocolli or baked potatoes. I do think a lot of people like it though but my mom and I really didn't find it to taste like cheese.
@Hanna Kinn I made it an I like it. It tastes like the jarred cheese sauce. But only after I added a some of my homemade salsa and pureed that in. Then it was really good. I also didn't think it tasted like a dip until I did that. I changed a few other things a little bit too. But that was the main addition.

she has a really good recipe for tofu gnocchi which I love - it basically uses tofu instead of potato and it works so well and you get gnocchi that have a nice bouncy texture and more protein than regular potato ones❤

I didn't even know it was a thing, but I've made it too. It's good! 😄 Also lentil gnocci, and chickpea gnocci. The chickpea gnocci boiled in a lasagna flavored sauce - delicious.
So it's more like gnudi, which is made with cheese. I've made it with tofu and it seems like what you're talking about.
But that's just worse gnocchi, isn't it? It's already a vegan dish and the advantage of tofu is having no flavour which is bad here
@@xPandamon I'm guessing the advantage is having more protein in the dish, which seems like a good idea honestly. Probably just gotta make sure you have a flavorful sauce 😊
The type of starch can make a big difference, depending on if it has mostly longer or shorter molecules. Tapioca starch for example gives a much stretcher, elastic and bouncy result as e.g. potato starch. All starches can thicken liquids. But the results do differ.

Next time, use dried yeast flakes instead of pickle juice. It tastes really nice. For liquid you cann use any plant based milk. I use coconut milk and a little coconut fat.

I make a vegan cheese from boiled potatoes and carrots! You just boil until soft, reserve some of the cooking liquid, season to taste and blend it up. It’s perfect for Mac and cheese but I feel like if you added more starch it would firm up more like that
what spices/seasoning do you add?

The vegan deli, Rebel Cheese, in Austin makes a damn good "farmers cheese" (plus a ton of other delish items). Anywho- It's a soft white cheese spread with herbs and whatnot. I think the soft chevre /goat/ cream cheese type cheeses are easier to dupe and I'd love a home recipe bc we'd put that on Sammies or melt into wraps or on bagels etc ❤❤
Hey Merle, you’re my girl. Thanks for the video. I don’t have any recipe recommendations, but I am curious if the type of potato matters here. I know different potatoes have different starch contents and different flavors and cook differently. Maybe a potato with a more mild potato flavor would work better as the base for a potato cheese?

I think the best vegan cheese recipe out there is Hot For Foods nacho cheese recipe (as far as a liquid cheese). Absolutely spot on. Roughly used that recipe for my vegan sauce business and it was a hit 🔥

As one of the ingredients I find potatoes to be fine. I also add carrots, onion, cauliflower, of course, nooch and other spices and it makes a very good umami-full sauce which I use on pizza, as nacho sauce, etc.

Just a thought, but it might help recipes like this to have a Vitamix or Blendtec style blender. I have a Ninja and it's particularly bad at making nut butters or getting all of the smallest bits mixed into smoothies. Those blenders turn everything into liquid which would change the texture and probably the flavor of this recipe significantly.
I actually used my vitamix on my own perosnal version of the cheese- texture was smoother but didn't save anything sadly hahaha still gelatinous and not cheese 😅

a friend of mine made it from cashews. she raved about it.
the potato recipe i saw said to freeze the mixture and then pull it out of the bowl and refreeze cut open to dry it out and make it more cheddar like.
I agree it needs turmeric, mustard, maybe annato...

A good cheese has high levels of fat and proteins, you can't make it from just starch and carbs. Also so unhealty to eat so much carbs! Maybe use coconut oil (instead of other high processed seed oils), then maybe proteins from beans, or nuts, or tofu. For "fermented" taste: add nutritional yeast. Maybe some olive extract. Also something for acidety. I guess you can't avoid some starch.
Also once it's set take it out of the mold I let it sit uncovered in the fridge for 4 to 5 days to dry. I season way more though 😅

Thank you for trying, so we don't have to! 😅 It's really easy to make a tasty spreadable cheese out of firm tofu and coconut oil + seasoning (like a little lemon juice, salt and chives for example). Don't think it would be any good heated though. 😇

Theres a vegan Parmesan Style grated cheese from „follow your heart“ that has modified potato starch as one of the main ingredients. It was my fav Parmesan ever, but follow your heart recently stopped delivering to the uk 😭 If you could successfully show me how to make something very similar at home that would be amaaazing 🌱

My only suggestion would be to try throwing chunks of this stuff into a dehydrator for a bit to see if you can improve its grateability.

Hi i think somthing beautiful you can do, that I would personally really like to watch, is make the cheese serie, but like take everycheese and make in three levels. So beginners, home shefs and professionals or something of that nature. Or like 15 min vs 2h vs 1day. So not necessarily that, but it basically means to take the best simple recipe you know but also like a solid long good one. ❤ thanks for your content

Can you do a smoked gouda ranking? I've seen a review of the follow your heart smoked gouda, and the tasters said it was good - they are not vegan, FYI. But I'm hesitant to try because of their reputation on your channel. I trust your judgment! My mom, brother, and I enjoyed the violife cheddar slices!!!
wonder if using umeboshi paste as a flavoring would work for a vegan cheese. umeboshi is used as a " parmesan cheese" alternative. (its also great on sweet corn).

This is misrepresentation of potato cheese ;-; the idea is definitely older than TikTok, and you're supposed to use nutricional yeast for cheesy flavour and a carrot for colour. It's really cool as a dip. The texture of yours is weird; I think either the potato was undercooked (why even steam it? the version I know has the potato and the carrot boiled) or you didn't blend it enough. You also need much more oil (you can use canola oil and then add some olive oil for flavour after you blend it) and remember not to blend olive oil, becuase it turns bitter. I hope you'll give potato cheese another chance, because this particular recipe is just meh.

Miyoko's feta recipe is the best one I have made. I used saurkraut brine instead of rejuvelac and it tasted great.
She usually uses a *lot* of spices so I would say try again with higher qty of turmeric and such.

my all-time fave parmesan that is oh so simple is just cashews + salt + nutritional yeast = so so good! never fails and impresses vegans & non-vegans alike!
Ground annatto I think would be a better coloring for a homemade vegan cheese and it would add that missing flavor that vegan cheeses lack. Turmuric adds a weird flavor to things and the yellow is never yellow enough.
Great to see someone try this as I saw it and was also sceptical. Also always wonder why these things have to be named "vegan cheese". There's a cashew one I saw recently as well. Just call it a potato spread or something. Cheese is cheese. It has certain chemical properties. If it doesn't have those same properties, it's not cheese. The only vegan cheese that exists is that one they make out of that new vegan dairy. They use GMO yeast to make casein so they can actually make real cheese with the real chemical properties of cheese. I don't get why vegan food can't just stand on its own. It's like calling seitan "vegan chicken". It's its own thing and it deserves to be known for itself.

This is looking very similar to a vegan nacho cheese recipe thats been around forever. The differences are that the nacho version uses nutrional yeast along with the seasonings and a bit of blanched carrots in place of the tumeric to give it color and pickled jalapeño brine instead of pickles. Of course the nacho version is meant to be served hot. Also it can be tweaked to be the base of a soup by thinning it out with a plant milk. There's a couple of different versions floating around online if you want to give that a try.
I use the 3 minute coconut milk recipe when I'm lazy. (always) It's coconut milk, nutritional yeast, random spice blend like GP, OP, SALT, PEP and then a starch. I prefer corn because I have it unlike tapioca.

Best vegan cheese recipes are by the Gentle Chef, but to make anything cheesy it sounds weird but I add nooch, miso, garlic + onion powder, dijon mustard, salt and a little ACV. It's the magic combo
There's vegan recipes I've seen where it seems like the people that made it have forgotten what the regular product is like, and so they glom onto one or two traits and think that makes it the thing.
If I was a potato about to be made into cheese I'd be steamed too.
